Cheese made in larger scale production facilities will make recipe modifications as the milk undergoes seasonal variations. While consistency is importance to us, we also want to honor the living nature of cheese and allow each batch to reflect the realities of their makes. The recipe stays the same, but the milk changes, and you can taste it.
