Dive into the rich and flavorful world of Mexican Beef Birria, a perfect dish for gatherings and special occasions.

- Ingredients
2 lbs beef chuck roast
4 cups beef broth
3 dried guajillo peppers
2 dried ancho peppers
3 cloves garlic, minced
1 onion, chopped
1 tablespoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Corn tortillas (for serving)
Fresh cilantro (for garnish)
Lime wedges (for serving)

- Directions
1. In a skillet, toast the dried guajillo and ancho peppers until they become fragrant. After toasting, remove the stems and seeds, then soak the peppers in hot water until they are soft, which takes about 15 minutes.
2. Once softened, transfer the peppers to a blender along with the minced garlic, chopped onion, oregano, cumin, paprika, and a small amount of beef broth. Blend until you achieve a smooth and homogenous sauce.
3. Place the beef chuck roast in the crockpot, then pour the prepared pepper sauce over it. Add the remaining beef broth to the pot and season with salt and pepper to your taste.
4. Cover and cook on low for 8 hours, allowing the beef to become tender and infused with spices.
5. Once the beef is fully cooked, use two forks to shred it into bite-sized pieces. You can serve it as a stew with the broth or use the beef to fill corn tortillas and make delicious birria tacos.
6. Garnish your dish with fresh cilantro and present it with lime wedges to enhance the flavors.

Creamy Shrimp and Crab Bisque

Ingredients

For the bisque:

4 tbsp unsalted butter, divided
1 lb large shrimp, peeled, deveined, and chopped
4–6 whole shrimp, reserved for garnish
Salt and black pepper, to taste
8–10 green onions, sliced, white and light green parts separated from dark green tops
3/4 cup diced carrots
3/4 cup diced celery
6 cloves garlic, minced
1½ tsp smoked paprika
1½ tsp Old Bay seasoning
1 tsp dried thyme
1/4–1/2 tsp cayenne pepper, optional
2 tbsp tomato paste
1/4 cup all-purpose flour
1/4 cup dry white wine
32 oz seafood broth
2 bay leaves

To finish:

2 cups heavy cream
8 oz lump crab meat, divided
Hot sauce, optional
Fresh parsley, for garnish
Extra smoked paprika, for garnish

Directions

Melt 1 tablespoon butter in a large Dutch oven or heavy pot over medium heat. Add the chopped shrimp, season with salt and black pepper, and cook for 3–4 minutes, until opaque and just cooked through. Remove the shrimp from the pot and set aside, keeping 4–6 whole shrimp for garnish.

In the same pot, melt the remaining 3 tablespoons butter. Add the white and light green parts of the green onions, carrots, and celery. Sauté for 5–6 minutes, stirring occasionally, until the vegetables begin to soften.

Add the minced garlic and cook for 1 minute, until fragrant. Stir in the tomato paste and cook for 2 minutes, allowing it to deepen in color and develop a richer flavor.

Sprinkle the flour over the vegetables and stir constantly for 2 minutes to create a thick base. Pour in the white wine, scraping the bottom of the pot to release any browned bits. Cook for about 2 minutes, until the wine is mostly reduced.

Slowly whisk in the seafood broth to prevent lumps. Add the bay leaves, smoked paprika, Old Bay seasoning, dried thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a gentle simmer and cook for 15 minutes, stirring occasionally.

Remove the bay leaves. Turn off the heat and add the cooked chopped shrimp back into the pot. Blend the soup with an immersion blender until smooth and creamy.

Return the pot to medium-low heat. Stir in the heavy cream and half of the lump crab meat. Simmer gently for 5 minutes, being careful not to boil the bisque. Taste and adjust the seasoning with more salt, pepper, cayenne, or hot sauce if desired.

Ladle the bisque into bowls. Top with the reserved whole shrimp, remaining crab meat, dark green onion tops, parsley, and a light sprinkle of smoked paprika. Serve warm.

2 boneless, skinless chicken breasts
8 oz (about 225g) egg noodles or your preferred pasta
4 tablespoons unsalted butter
3 cloves garlic, minced
1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
1 teaspoon dried parsley (or fresh parsley for garnish)
1 tablespoon olive oil
1 cup chicken broth (preferably low-sodium)
½ cup heavy cream
Salt and black pepper, to taste
Optional: Grated parmesan cheese for topping
Optional: Red pepper flakes for added spice

- Directions
Cook the Chicken: Start by heating the olive oil in a large skillet over medium-high heat. Season the chicken breasts generously with salt, black pepper, and dried thyme on both sides.

Sear the Chicken: Once the skillet is hot, add the chicken breasts and cook for about 5-6 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the pan and set it aside to rest. Once cooled slightly, slice it into thin strips or bite-sized pieces.

Cook the Noodles: While the chicken is cooking, bring a large pot of salted water to a boil. Add the noodles and cook according to the package instructions until al dente. Drain the noodles, reserving about ½ cup of the pasta cooking water.

Melt the Butter: In the same skillet used to cook the chicken, reduce the heat to medium. Add the butter and allow it to melt, scraping up any flavorful bits from the bottom of the pan.

Sauté the Garlic: Once the butter is melted, add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

2 cups sushi rice (uncooked)
2.5 cups water
1/4 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
1 lb fresh salmon fillet (skinless and diced)
1/2 cup mayonnaise
2 tablespoons Sriracha sauce (or to taste)
1 teaspoon sesame oil
1/2 cup green onions (chopped, plus extra for garnish)
1 sheet nori (cut into small strips)
to taste tobiko (optional for garnish)

- Directions
Preheat your oven to 375°F (190°C). Cook the sushi rice according to package instructions, rinsing it under cold water before cooking it in a rice cooker or pot until tender.

In a mixing bowl, combine the rice vinegar, sugar, and salt, stirring until dissolved. Once the rice is cooked, fluff it with a fork and gently fold in the vinegar mixture. Spread the rice evenly in the bottom of a baking dish and allow it to cool slightly.
