One of our neighbors came over yesterday and tilled our newest garden bed expansion. I have lots of ideas, but will put in a cover crop for winter and plant it out next year. Plenty of time to figure out details. One thing that I have learned to do is: think a year in advance, with regards to soil and plants.

The last two photos are of last year's expansion. Now they are home 4 persimmon trees, 2 goumi berry bushes, edible canna, edible dahlia, winter squash, sweet potatoes, okra, and countless herbs.

I grew up thinking okra was something that came in a pickle jar. I thought it was supposed to be green?

These beauties came from a mix of 100 different okra varieties called 'Ultracross' okra. What an amazing array of colors, plant heights, and leaf shapes.

What good is a plant that you do not know how to cook? That my friends, is what comes next.

Tomato season has started ๐Ÿ…

This year we are trialing three old processing varieties. Two that were bred for Campbell (soup) Company and one for Heinz (ketchup).

So far the flavor is off the charts for all of them ๐Ÿ˜‹

We got buckets of carrots... (why don't they have an emoji with a bucket of carrots?)

This was the best year for carrots, flat-out-ever! Even when we were selling at farmers markets, they were never as productive as this year's. Though we've been eating some fresh, these are destined for the freezer and future soups and strews throughout winter. With still more to come.

We purchased seeds from Edible Acres and being in Ithaca, NY I wasn't sure how the garlic would do in our Southern Appalachian climate. I'd say they did great!

Honestly, we use that term loosely around here, as most of the weeds are edible, medicinal, or used in a craft. These were going in a low area next to a creek on our property.

1 & 2 Silky dogwood (Cornus amomum)
3 & 4 Boneset (Eupatorium perfoliatum)
5 & 6 New York Ironweed (Vernonia noveboracensis)
