Making pickles!
Sterilize your jars in boiling water WHILE
Making your brine in a pot:
Half water
Half white vinegar
Pinch of pickling salt
1/2 tsp sugar
Whatever spices and herbs you want (dill, rosemary, any peppers, garlic, pickling spice etc)
Bring to a boil
While your brine is boiling and your jars are getting Sterilized (boiling in a separate pot), slice up your cucumbers however you want them (spears, slices etc). When your jars have been sanitized, pack each with cucumbers and any additional fresh herbs, garlic etc, pouring the brine over each, leaving about 1/2" of head space. Place the lids on finger tight and walk away. Lids should suck down on their own within 24 hours.
*If you feel like you need to add the crisping agent* add about 1/4 tsp per jar, before you pack them with cucumbers.
Common items put into a pickle brine or into the jar:
Mustard seed
Dill
Rosemary
Bay
Garlic
Peppers
Pickling spice
Onion
But these are similar to pickled eggs in that you can play with recipes and almost put anything you want in there.
Typically most people are going to use an actual pickling cucumber, but there are other types that can make a pretty good pickle too, like our China Jades!
