Chocolate lasagna
Ingredients
* 36 Oreo cookies (regular package, cream centers left in)
* 6 tablespoons butter, melted
* 8 ounces cream cheese, softened
* ¼ cup granulated sugar
* 2 tablespoons milk
* 16 ounces Cool Whip, divided
* 2 boxes (3.9 ounces each) instant chocolate pudding mix
* 2¾ cups milk
* ¾ cup miniature chocolate chips
Directions
1. Crush Oreos into fine crumbs.
2. Reserve about ½ cup crumbs for topping.
3. Mix remaining crumbs with melted butter and press into the bottom of a 9x13-inch dish.
4. Refrigerate while preparing filling.
5. Beat cream cheese, sugar, and 2 tablespoons milk until smooth.
6. Fold in half of the Cool Whip (4 ounces).
7. Spread cream cheese mixture over Oreo crust.
8. In another bowl, whisk pudding mixes and 2¾ cups milk until thickened. Whisk in 4 oz of coolwhip.
9. Spread pudding over cream cheese layer.
10. Top with remaining Cool Whip.
11. Sprinkle reserved Oreo crumbs and mini chocolate chips over the top.
12. Refrigerate at least 4 hours before serving.

Spinach, Tomato & Cheese Quiche
Ingredients
* 1 refrigerated deep-dish pie crust
* 7 large eggs, beaten
* 2 cups fresh baby spinach, chopped
* ⅔ cup skim milk
* 6 tablespoons grated Parmesan cheese
* 3 tablespoons fresh basil, chopped
* ¼ teaspoon kosher salt
* ½ cup part-skim ricotta cheese
* ⅓ cup part-skim mozzarella cheese, shredded
* ¾ cup grape or cherry tomatoes, halved
Directions
1. Preheat oven to 350°F.
2. Place pie crust in a deep-dish pie plate.
3. In a large bowl, whisk eggs and milk together.
4. Stir in spinach, Parmesan, basil, salt, ricotta, mozzarella, and tomatoes.
5. Pour mixture into pie crust.
6. Bake 40–50 minutes, or until center is set and lightly golden.
7. Let stand 10 minutes before slicing and serving.

Classic Mason Jar Lemon Shake-Up
Ingredients
* 1 large lemon
* 2–3 tablespoons granulated sugar
* 1 cup cold water
* Ice
* 1 quart mason jar with lid
Directions
1. Roll lemon firmly on the counter to release juices.
2. Cut lemon into wedges and place in mason jar.
3. Add sugar.
4. Using a wooden spoon or muddler, mash lemons and sugar together until juicy.
5. Fill jar halfway with ice.
6. Add cold water.
7. Screw on lid tightly and shake vigorously for 30–60 seconds.
8. Taste and add more sugar if desired.
9. Pour into a glass or drink straight from the mason jar.
Coconut Cream Pie
Ingredients
* 1½ cups white sugar
* 5 tablespoons all-purpose flour
* Pinch of salt
* 4 eggs, separated
* 2 cups milk
* ½ teaspoon coconut extract
* ½ teaspoon vanilla extract
* 2 tablespoons butter
* 1 cup shredded coconut
* 1 baked pie shell
Directions
1. In a large microwave-safe mixing bowl, whisk together the sugar, flour, and salt.
2. Add the egg yolks and about ½ cup of the milk. Stir until a smooth paste forms.
3. Gradually whisk in the remaining milk until well combined.
4. Microwave on high for 3 minutes. Remove and whisk well.
5. Microwave for another 3 minutes and whisk again.
6. Check thickness. If needed, microwave an additional 2 minutes, stirring well afterward.
7. Stir in butter, vanilla extract, coconut extract, and shredded coconut.
8. Pour filling into the baked pie shell.
9. Top with prepared meringue.
10. Sprinkle additional coconut over the meringue if desired.
11. Bake at 350°F for about 10 minutes, or until lightly browned.
12. Cool completely before serving.

Meringue Topping
Ingredients
* 4 egg whites
2 teaspoon cream of tartar
* ⅓ cup sugar
Directions
1. Beat egg whites and cream of tartar until stiff peaks begin to form.
2. Gradually add sugar while beating.
3. Continue beating until glossy stiff peaks form.
4. Spread over hot pie filling, sealing meringue to the crust edges.
5. Sprinkle with a little coconut if desired.
6. Bake at 350°F for about 10 minutes, until golden brown.
Mammy’s Potato Salad
Ingredients
* 5 medium russet potatoes, boiled and peeled
* 5 boiled eggs, peeled
* 1½ small onions, chopped
* ½ cup relish (sweet or dill)
* 1¾ cups mayonnaise
* Salt, to taste
* Paprika, for garnish
Directions
1. Cut potatoes into bite-sized cubes.
2. Chop the boiled eggs.
3. Place potatoes, eggs, onions, relish, and mayonnaise in a large bowl.
4. Season with salt to taste.
5. Stir gently until everything is well combined.
6. Sprinkle paprika over the top.
7. Serve warm or chill in the refrigerator before serving.
