While traveling through the US, towing our Airstream, we sometimes come across signs that pique our curiosity. “World Famous” is one I notice. We stopped for gas and I noticed a sign, hand printed on corrugated metal - “World Famous Pot Roast Sub”. I had to go in and check it out. The sign inside read, “Fine Dining at I-Mart”. How could you go wrong? I’ve never had a pot roast sub. I went out to the truck and googled it. It was a fact! I had to buy one. I bought a 6” sub and it was as heavy as a 2 pound bag of brown sugar. She asked if I wanted everything. It was go-for-broke yes! Jalapeños, banana peppers, tomatoes, pepper jack cheese, mustard, mayo, and a HUGE helping of beef pot roast. It was all carefully placed on a fresh white roll and the bottom half was pressed gently by expert hands to accommodate the fresh ingredients. It was so delicious!! Crunchy lettuce and onions, salty pickles, mildly fiery jalapeños with a bit of creamy cheese combined with tender pot roast. If you’re ever in Parkers Crossroads, TN and you stop for gas, get this sandwich at their fine dining establishment.
