🔥🥩 When MrsFlavorsmith Calls for BBQ… You Better Deliver! 🥩🔥
Well, MrsFlavorsmith informed me that her coworkers had been requesting some of MrFlavorsmith’s tasty backyard BBQ for their company potluck! 😎🍖
The request? TRI-TIP! 🥩🔥
And you know me… when it comes to feeding a crowd, we’re not cutting corners! We’re bringing the FLAVOR! 💪
But this time, I had a special little assistant joining me in the backyard… my four-year-old son, affectionately known as Mini Flavorsmith! 👨🍳❤️
And as you’ll see, he takes his role as my official backyard BBQ aroma inspector VERY seriously! 😂👍
Now, as with just about everything I cook, I approached these tri-tips using a technique I call FLAVOR STACKING!
The concept is simple: build layers of complementary flavors throughout the entire cooking process, starting on the inside and working your way out. Each step contributes something different to the final flavor profile.
🍋 FLAVOR STACKING — STEP 1: FLAVOR FROM THE INSIDE OUT!
I started by injecting the tri-tips throughout with freshly squeezed lime juice!
That citrus injection establishes our first layer of flavor, introducing a bright, tangy element inside the meat rather than relying entirely on surface seasoning.
🌶️ STEP 2: BUILD THE SEASONING LAYER!
I recently received three new rubs from RogueCookers.com — All-Purpose, Texas Brisket, and Doug’s Dust.
After giving them all a good smell test, I went with the Rogue Rubs Texas Brisket Rub!
Something about that savory aroma told me it would pair beautifully with the citrus from the lime injection.
But before committing, I needed a second opinion!
Enter Mini Flavorsmith! 👨🍳🥰
My little backyard BBQ partner gave the rub a good sniff, flashed me an enthusiastic THUMBS UP! 👍😎
That’s all the confirmation I needed!
A generous coating across the tri-tips established our second layer of flavor!
🔥 STEP 3: BRING ON THE SMOKE!
For our third layer of Flavor Stacking, we’re introducing that beautiful smoky flavor from burning lump charcoal!
I fired up my trusty Weber 22-inch kettle, setting it up for an indirect cook using Cowboy brand lump charcoal.
And Mini Flavorsmith was right there with me, eagerly helping throughout the backyard cooking process! ❤️
These are the moments I absolutely love — sharing my passion for backyard cooking with my little guy, watching his curiosity grow, and making memories around the grill! 👨👦🔥
This cook also gave me the opportunity to put several new pieces of equipment to work!
✅ Mallory Cookware Cast Iron Grill Grates — A fantastic cooking surface!
✅ Mallory Cookware Fire Wall System — Perfect for containing a generous load of lump charcoal while establishing an indirect cooking zone.
✅ AirChef BBQ Torch — This thing is an absolute BLAST! 🔥💥 A handheld flamethrower capable of producing temperatures exceeding 3,000°F! Lighting charcoal has never been so much fun!
✅ ThermoWorks RFX Wireless Temperature Probes — My first real opportunity to put this new system through its paces!
And let me tell you…
I WAS IMPRESSED! 🎯
With two wireless RFX probes monitoring the internal temperatures of the tri-tips and a wired ambient probe connected to my ThermoWorks Gateway monitoring the kettle’s cooking chamber, I could follow everything through the ThermoWorks app on my smartphone via my home Wi-Fi network.
📡 NOT ONE SINGLE CONNECTION DROP!
Seriously! The most stable wireless temperature probe system I’ve personally used to date!
And here’s where things got interesting…
Towards the end of the cook, I decided to hit those tri-tips with the AirChef torch for a little extra char — with the wireless probes still inserted! 🔥
They handled it beautifully!
I also gave each tri-tip a quick reverse sear directly over the hot lump charcoal, roughly a minute per side, making a couple of passes to develop that beautiful exterior crust.
Once they reached my desired internal temperature of approximately 137–142°F, I wrapped them in foil and refrigerated them overnight.
🥩 STEP 4: THE FINAL FLAVOR STACK — A SAVORY CITRUS BATH! 🍋🧈
The next morning, it was time to bring everything together!
I sliced those beautiful tri-tips nice and THIN and loaded them into the crockpot!
We already have the citrus injection, the savory seasoning, and the smoky charcoal flavor.
Now we’re bringing all those flavors together with a rich, buttery, savory citrus bath!
Here’s what went into the mixture:
🍖 Beef bouillon
🧄 Garlic powder
🌶️ More Rogue Rubs Texas Brisket Rub
🍋 A little Kinder’s Tequila Lime Rub
🧈 Approximately 4 tablespoons of real butter
💧 Roughly 4 cups of water
I heated that mixture to just below boiling, poured it over the thinly sliced tri-tip, and finished everything with the freshly squeezed juice of two large limes! 🍋🍋
And then came one of my FAVORITE moments of this entire cook! ❤️
THE MINI FLAVORSMITH SEAL OF APPROVAL! 👨🍳👍
As I finished preparing the crockpot, Mini Flavorsmith came over to investigate what Daddy had been cooking.
He leaned in, closed his eyes, and took one of those BIG, DEEP breaths through his nose, trying to capture every last bit of that incredible aroma! 🤤
Then he opened his eyes WIDE, raised those little eyebrows as high as they could go, tilted his head slightly downward while looking up at me, and with the most genuine expression of amazement said…
“THAT SMELLS AMAZING!” 🥹❤️🔥
I’m telling you, folks… you can’t manufacture moments like that!
No fancy restaurant review, no five-star rating, no professional food critic could have made me smile more than hearing those three words from my little boy!
THAT RIGHT THERE IS WHAT IT’S ALL ABOUT! 👨👦❤️
And apparently, Mini Flavorsmith knows what he’s talking about! 😂
Because this entire cook was built around my philosophy of FLAVOR STACKING!
🍋 Layer 1: Fresh lime injection — citrus flavor from the inside out!
🌶️ Layer 2: Rogue Rubs Texas Brisket Rub — building that savory seasoning profile!
🔥 Layer 3: Cowboy lump charcoal — introducing that unmistakable backyard BBQ smokiness!
🧈 Layer 4: The buttery, savory citrus bath — bringing all those flavors together!
FOUR DISTINCT LAYERS OF FLAVOR! 💪🔥
Loaded everything up, and off to work it went with my beautiful wife, MrsFlavorsmith! ❤️
🏆 AND THE VERDICT?
Later that afternoon, I received a message from MrsFlavorsmith…
IT WAS A HUGE HIT!!! 🎉🔥🥩
Apparently, everyone went absolutely NUTS over the flavor and how delicious everything turned out!
And the ultimate compliment?
NOT A SINGLE LEFTOVER COMING HOME! 😂🙌
Now THAT’S what I call a successful BBQ potluck!
Between trying out the new ThermoWorks RFX system, putting the Malory equipment to work, having way too much fun with that AirChef torch, discovering how beautifully Rogue Cookers Texas Brisket Rub pairs with citrus, and having Mini Flavorsmith right there alongside me…
I’d call this cook a TOTAL SUCCESS! 💯🔥
But more importantly, this cook reinforces something I’ve believed for a long time.
Great BBQ isn’t just about what you put ON your meat. It’s about how you build flavor THROUGHOUT the entire cooking process!
That’s the philosophy behind my approach to FLAVOR STACKING, and it’s something I incorporate into just about everything I cook.
Every layer should have a purpose. Every ingredient should complement the next. And when you bring them all together, that’s when the magic happens! 🤤
But you know what makes it even better?
Having my four-year-old son right there beside me, learning, exploring, smelling, helping, and developing his own appreciation for great food!
Because at the end of the day, we’re not just cooking BBQ…
WE’RE MAKING MEMORIES, ONE FLAVOR AT A TIME! ❤️🔥👨👦
And judging by Mini Flavorsmith’s reaction AND MrsFlavorsmith’s coworkers…
I think we accomplished exactly that! 😎🥩
🔥LIVE A LIFE OF FLAVOR!😎🥩♨️👍
