Ahi Tuna, Mixed greens, Tomato, Radicchio cup with Asian slaw (carrot, cucumber, onion, garlic, ginger and crushed hazelnut) ... slivers of apple prop the dish and Lunaeon Riesling accompanies with delight.

This is how it all starts, depending on the size of the vessel we select quartz crystal(s) ranging from 3"x1" points, all the way up to 14 lb (~7 kg) points and slabs to place in the ferment for the duration of maceration.

Always nice to see them again at the end of the process.
