Pineapple Coconut Cooler Cocktail Recipe

Serves: 1 cocktail
Prep time: 5 minutes

Ingredients
2 oz white rum
1 oz coconut rum
2 oz pineapple juice
¾ oz fresh lime juice
½ oz simple syrup
Crushed ice
Pineapple wedge, for garnish
Fresh mint, for garnish
Instructions
Fill a cocktail shaker with ice.
Add the white rum, coconut rum, pineapple juice, lime juice, and simple syrup.
Shake well for 10–15 seconds until chilled.
Fill a tall glass with crushed ice.
Strain the cocktail into the glass.
Garnish with a pineapple wedge and fresh mint.
Serve immediately while cold and refreshing.
Optional creamy version

Add 1 oz coconut cream before shaking for a richer tropical drink.

Optional sparkling version

Top with club soda or lemon-lime soda for a lighter fizzy version.

Frozen Strawberry Colada
Ingredients

For 2 glasses:

2 cups ice
4 oz white rum
4 oz coconut cream
6 oz pineapple juice
2 cups frozen strawberries
1 oz fresh lime juice
1 oz simple syrup, optional
Pineapple wedges, for garnish
Fresh strawberries, for garnish
Instructions
Add the ice, white rum, coconut cream, pineapple juice, frozen strawberries, lime juice, and simple syrup to a blender.
Blend until smooth, thick, and slushy.
Taste and adjust: add more pineapple juice if it’s too thick, or more ice if you want it frostier.
Pour into two rounded cocktail glasses.
Garnish each glass with a pineapple wedge and a fresh strawberry.
Serve immediately while cold and creamy.
Mocktail Version

Replace the white rum with coconut water, pineapple juice, or lemon-lime soda for a tropical non-alcoholic version.
