Today’s special features fresh local pork loin from Eastside Ranch.
For this dish, we thinly slice the pork loin and wrap it around spring onions that have been slowly confit-cooked until sweet and tender. We then spread Saikyo miso over the pork, roll it up, coat it in panko breadcrumbs, and fry it until crisp.
As you cut into it, the confit spring onions release their natural sweetness and juiciness, while the Saikyo miso brings everything together with rich umami. The quality of this local pork is exceptional—tender, juicy, and full of flavor.
We serve it with our house-made sauce over a bed of locally grown mizuna greens. The mizuna adds a fresh, crisp texture that perfectly complements the richness of the pork. To finish, we top it with freshly chopped shiso for a bright, aromatic touch.
Right now we’re in that special transition between spring and summer. Soon, the spring vegetables will give way to summer crops, making this one of the last chances to enjoy many of these seasonal flavors at their peak.
