Tomato Chutney!!😋😋
It is the first thing I make sure to make enough of when tomatoes are in season, especially from my home garden. I can never imagine running out of this chutney:)
It is a traditional condiment made with tomatoes, spices and herbs. I enjoy it with rice, sandwiches, fritters, parathas. It tastes simply delicious with just anything.👌
Ingredients:
6 Tomatoes, medium chopped
1 medium onion, diced
1 tsp ginger garlic paste
1 tsp red chilli powder
1 tsp coriander powder
1 tsp cumin powder
1// tsp turmeric powder
Few Curry leaves
2 tbsp Lemon juice or 1 tbsp tamarind paste
2 Dried red chillies chopped
3 Green Chillies chopped
3 Garlic pods
1/4 tsp Mustard seeds (optional)
Oil
Salt to taste
Directions:
Take a shallow pan and add 2 tbsp oil. Now add diced onion and ginger garlic paste.
Sauté for couple minutes.
Add chopped tomatoes, red chilli powder, turmeric powder, coriander powder, cumin powder, green chillies, lemon juice/tamarind paste,few curry leaves and salt to taste. Adjust spices according to your taste. I like my chutney extra spicy!
Sauté well for 5 minutes.
Add 2 cups of water. Lower the heat and cover the lid.
Let it cook untill the tomatoes are soft, and the oil leaves the sides. You can blend it just a little using hand blender or leave it the way it is.
Once the chutney is ready, it’s time for the most important part that is tempering/tadka.
Take a small pan and add oil or ghee. Now add 3 chopped garlic pods, mustard seeds, 1 tsp cumin seeds, dry red chillies, curry leaves. Sauté for couple minutes and pour it over the cooked tomato chutney.
It can be stored in refrigerator for few weeks.
