Beef Cheeks. Yep, I said it. Beef Cheek Tacos to be more precise.
Now hear me out: When done right, beef cheeks can be the star of a perfect taco. Its about a six hour labor of love to do them right, but so worth it. We trim them up well, then slow smoke them for 3 hours. When the bark starts looking good, we take them off the smoker and braise them with super thinly sliced onions and garlic for another 2-3 hours to get those cheeks super tender. Once they are fall-apart tender we pull them and mix with the onions and garlic from the braising. Lastly, we stack that delicious mixture on a fresh tortilla hot off the grill and top with guacamole, fresh jalapenos, cilantro, cotija cheese and a couple of lime wedges. Taco Perfection!
