Fresh brisket on the board!!! For all you Buc-ees fans: just met Randy Pauly, champion pitmaster, and the man who smokes all of the briskets for Buc-ees nationwide. If you've eaten brisket from there, this man smoked it. Very cool guy. Super friendly.

Camp Brisket at Texas A&M is legit! We took a short break from brisket to enjoy a beautiful Texas sunrise with a genuine chuck wagon breakfast prepared by Homer Robertson, a champion Chuck wagon cook. The vast amount of knowledge being shared by all of the BBQ pros here is impressive. The food is equally exceptional.

When it comes to BBQ, the meat is the star of the show. However, great sides can make the bbq experience perfect. Our sides are prepared fresh and we get raves on them. One of our favorite cuts of beef: Tri-Tip! The tri tip is cut from the bottom sirloin and has a rich, beef flavor and great marbling which makes for a tender, juicy bite. We marinate our trip tip in a citrus/spice marinade for 24 hours before cooking. This one was slow smoked over cherry for about 2 hours, then quick-seared to a medium rare for that critical crust!

We here at Ironccraft support our teachers! (and our Ashley High School PTSA !)We are proud to donate 90lbs of slow smoked pulled chicken and pulled pork for the Ashley High School PTSA. They have been pulling out all of the stops all week, and today they are feeding the Eugene Ashley High School Staff a nacho bar in celebration of Teacher Appreciation Week. Beef Cheeks. Yep, I said it. Beef Cheek Tacos to be more precise.

Now hear me out: When done right, beef cheeks can be the star of a perfect taco. Its about a six hour labor of love to do them right, but so worth it. We trim them up well, then slow smoke them for 3 hours. When the bark starts looking good, we take them off the smoker and braise them with super thinly sliced onions and garlic for another 2-3 hours to get those cheeks super tender. Once they are fall-apart tender we pull them and mix with the onions and garlic from the braising. Lastly, we stack that delicious mixture on a fresh tortilla hot off the grill and top with guacamole, fresh jalapenos, cilantro, cotija cheese and a couple of lime wedges. Taco Perfection!

Who loves brisket? We do! This 22lb monster of a brisket (before trimming) was slow smoked over hickory for 12 hours. Smoked Texas style with our special SPG (salt, pepper & garlic) rub for that crucial peppery bark!
