Think All Olive Oils Are the Same? Think Again.

Not all olive oils are created equal.
"Extra Virgin" isn’t just a marketing buzzword—it’s a rigorous quality standard. Swipe to see why your bottle might be keeping secrets from you.

The Quality Hierarchy:
EVOO sits at the top. Virgin oil allows for slight flaws, while Lampante is unfit for human consumption without refining. Unlike chemically processed "Refined" oils, EVOO is pure, defect-free fruit juice.

The Entrance Exam:
To earn the EVOO title, an oil must pass two mandatory tests: a Chemical Analysis in a laboratory and a Sensorial Analysis by a certified human tasting panel.

The Lab Results:
True EVOO must have a Free Acidity

What is Extra Virgin Olive Oil? 🫒
Extra virgin olive oil is olive oil produced with a free fatty acid content below 0.8%.
According to the International Olive Council, it has three positive characteristics:

✨ Fruitiness — the characteristic aroma of the olive oil, depending on the type of olive.
✨ Bitterness — a spicy, peppery taste reminiscent of dark chocolate or arugula (not chili heat).
✨ Pungency — the slight burning sensation it leaves in the throat.

These characteristics reflect the quality and nutritional richness of the oil — contrary to popular belief, they indicate that the oil is good, not bad.
