🍫 No-Bake Chocolate Peanut Butter Cup Bars

Closing out the week with the dessert that tastes like the candy aisle, minus the wrapper.

A peanut butter layer on the bottom, chocolate ganache on top, and the whole thing sets up in the fridge with zero oven time.

Ingredients:
• 1 cup peanut butter
• 1/2 cup butter, melted
• 1 1/2 cups powdered sugar
• 1 1/2 cups graham cracker crumbs
• 1 1/2 cups chocolate chips
• 2 tbsp heavy cream

Directions:
1. Mix the peanut butter, melted butter, powdered sugar, and graham crumbs until it forms a thick dough.
2. Press into a lined 8x8 pan.
3. Melt the chocolate chips with the heavy cream, stirring until smooth.
4. Pour over the peanut butter layer and spread evenly.
5. Chill at least 2 hours before slicing.

All the tang of key lime pie, in a bar you can actually pick up with your hands.

Graham crust on the bottom, a tart lime cheesecake layer on top, sliced into neat little squares instead of fighting with pie slices.

Ingredients:
• 1 1/2 cups graham cracker crumbs
• 6 tbsp butter, melted
• 16 oz cream cheese, softened
• 1/2 cup sugar
• 2 large eggs
• 1/2 cup key lime juice
• 1 tbsp lime zest

Directions:
1. Preheat the oven to 325°F. Mix graham crumbs and melted butter, press into a lined 8x8 pan, and bake 8 minutes.
2. Beat the cream cheese and sugar until smooth.
3. Beat in the eggs one at a time, then the lime juice and zest.
4. Pour over the crust and bake 25-28 minutes, until the center is just set with a slight jiggle.
5. Cool completely, then chill at least 3 hours before slicing.

A gooey, layered celebration of everything you love about s’mores — now in full cake form. Graham cracker base, rich chocolate center, and a toasted marshmallow blanket on top. It’s the skillet dip’s bigger, more impressive sibling that still comes together without much fuss.

Ingredients (for a 9-inch round or square cake, 8-10 servings)
Graham Cracker Crust:

1 ½ cups graham cracker crumbs (about 10-12 full sheets)
⅓ cup granulated sugar
6 tbsp unsalted butter, melted
Pinch of salt

Chocolate Layer:

2 cups semi-sweet or milk chocolate chips (or chopped chocolate)
1 (14 oz) can sweetened condensed milk
2 tbsp unsalted butter
1 tsp vanilla extract
Optional: ½ tsp espresso powder (deepens chocolate flavor)

Marshmallow Topping:

3–4 cups mini marshmallows (enough to fully cover the top)
Extra graham cracker pieces or crumbs for sprinkling

For Serving:

Extra graham crackers for breaking and scooping

Directions:

Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan, springform pan, or cast-iron skillet with butter or non-stick spray. Line the bottom with parchment if using a regular pan for easier removal.
Make the crust: Mix graham cracker crumbs, sugar, melted butter, and salt until it resembles wet sand. Press firmly and evenly into the bottom of the pan. Bake for 8–10 minutes until lightly golden and fragrant. Let it cool slightly while you prepare the chocolate layer.

Heads up, this one's an adults-only dessert — it has real tequila in it, so save it for the grown-ups at the table. Tart, cold, a little sweet, on a pretzel-and-graham crust that gives it a salty edge without needing an actual salt rim.

Ingredients:
• 1 1/2 cups crushed pretzels and graham crackers, mixed
• 6 tbsp butter, melted
• 1 can sweetened condensed milk
• 1/2 cup fresh lime juice
• 1/4 cup tequila
• 2 tbsp orange liqueur (optional)
• 1 cup heavy cream, whipped
• Lime zest, for topping

Directions:
1. Mix the crushed pretzels, graham crackers, and melted butter, then press into a pie dish. Chill 15 minutes.
2. Whisk the condensed milk, lime juice, tequila, and orange liqueur together.
3. Fold in the whipped cream.

This is the dessert that made me feel like a kid again, no nostalgia goggles required.

Two soft-baked cookies, a scoop of vanilla ice cream between them, pressed just enough to squish out to the edges. Freezer for twenty minutes and it holds together perfectly.

Ingredients:
• 12 soft-baked chocolate chip cookies (homemade or store-bought)
• 1 pint vanilla ice cream, slightly softened
• Mini chocolate chips or sprinkles, for rolling the edges (optional)

Directions:
1. Scoop a generous portion of vanilla ice cream onto the flat side of one cookie.
2. Top with a second cookie, flat side down, and press gently until the ice cream reaches the edges.
3. Roll the exposed ice cream edge in mini chocolate chips or sprinkles if using.
4. Wrap individually and freeze at least 20 minutes to firm up before serving.

Yield: 6 sandwiches | Total time: 15 minutes active, 20 minutes freezing

Ingredients:

It's National Vanilla Ice Cream Day, and I'm not letting anyone tell me this flavor needs an apology.

Done right, with real vanilla bean flecks and no ice cream maker required, this is the version that makes people stop reaching for anything fancier.

Ingredients:
• 2 cups heavy cream
• 1 cup sweetened condensed milk
• 1 vanilla bean, split and scraped (or 2 tsp vanilla bean paste)
• Pinch of salt

Directions:
1. Whip the heavy cream to stiff peaks.
2. Fold in the condensed milk, vanilla bean seeds, and salt.
3. Pour into a loaf pan and smooth the top.
4. Freeze at least 6 hours, ideally overnight.

A scoop of vanilla ice cream, a shot of hot espresso poured right over it. That's genuinely the whole recipe.

Ingredients:
• 1 scoop vanilla ice cream
• 1 shot hot espresso (or 1/4 cup strong brewed coffee)
• Chocolate shavings, optional

Directions:
1. Scoop the vanilla ice cream into a small glass or cup.
2. Pour the hot espresso directly over the top right before serving.
3. Top with chocolate shavings if using, and eat immediately while the contrast between hot and cold is still there.

Yield: 1 serving | Total time: 5 minutes
