The JFK Harris. Light rum, lemon, mint, and a red wine float on top. Swipe for the full recipe.

The float here is MC² from Damiani Wine Cellars, an impressive blend of Merlot, Cabernet Franc, and Cabernet Sauvignon. A vet school friend brought it down with her on a visit this week, and we ended up drinking most of the bottle floating in the pool. Wine wasn’t the only thing floating this week.

Silly Old Soul

3 oz limeade (1 part fresh lime juice, 1 part simple syrup, 4 parts water)
1.25 oz gold rum
¼ oz Velvet Falernum
¼ oz blackstrap rum (float)
2 dashes allspice dram
Few dashes Angostura bitters (at the top)

Feynman’s almost 14 now. Still happy, still playful, still snuggly and loving on everyone he meets, just getting unsteady on his feet these days. Seemed right to name this one after him.

First pour from Coconuts & Carnage by Justin Wojslaw, which arrived yesterday. Fifty original recipes from Seattle and I have a lot of bookmarking to do.

Started with the Second Avenue Sling, a simplified take on the Singapore Sling. Just four ingredients, and the Cherry Heering and Bénédictine carry it. The book calls for London dry but I went with Kyrö because it’s the only gin I keep around.

1 oz lime juice
1 oz cherry liqueur
1 oz BÉNÉDICTINE Liqueur
1.5 oz Kyrö Distillery Company gin

Shake everything with cracked or pebble ice. Dump into a tall glass. Garnish with a mint sprig and a lime wheel.

Got this Hurricane and Table recipe from the Cocktails by Steve app (Steve the Bartender). It’s Kirk Estopinal’s creation at Cure in New Orleans, poured into a vintage hurricane glass from Harolds Club in Reno.

It’s a lighter version of Pat O’s Hurricane and quite tasty. No idea what the “Table” part of the name means, though.

Craving something frosty. Three years ago I was chasing the northern lights in Finland. Norway was a side trip, though I ended up taking a literal one when I tripped running out of the Arctic Ocean. Sauna, then a cold plunge after. First time, only made it to my ankles. Went back in and pushed to shoulders deep. Then gravity got involved as I was running back to shore. Just me, my crocs, and my dignity.

Made strawberry margarita bites this weekend. The same mix that goes into the bites also makes a perfectly good margarita, so I poured what was left over ice and did both.

The best part was a salty lime sugar I sprinkled over the strawberries. Sweet, salty, sharp little citrus hit. I didn’t think of using it to rim the glass until it was too late. The strawberries got the good stuff first.

Salty lime sugar:
• 2 tablespoons sugar
• 1 teaspoon kosher salt
• 1 teaspoon finely grated lime zest

Heat advisory had me shoot outside and drink inside, and even that quick trip out was enough to fog the lens before I got the shot. The pool’s finally blue again too, which only took last week’s chlorine crash, some shock, and more pH strips than I’ll admit to. So this is a small celebration of sorts, enjoyed in full air conditioning.

Four cocktails, zero misses. That never happens.

Flaming Heart came first, served with the fishing float straw from Surfside Sips. Mai Tai came next, based on the Tropical Standard recipe. Pineapple Pisco Sour got one swap, acid-adjusted pineapple juice in place of lime. Falinum rounded things out.

The Piña Colada doesn’t need defending. It just needs better ex*****on.

The Tropical Standard version does a few things differently. Frozen pineapple chunks instead of relying entirely on juice. Pineapple juice acid-adjusted to lime acidity, so you get the brightness without the lime taste. And xanthan gum, which keeps the blended drink from separating into a slushy puddle.

Xanthan gum is unpleasant to work with, by the way. Slimy, clumpy, and it sticks to everything. My workaround was to blend it directly into the coconut mix ahead of time. The book calls for a 3:1 ratio of Coco Lopez to coconut milk, adjusted to 50 Brix. Made a big batch of that, incorporated the gum while blending, and refrigerated it. Night and day difference.

• 5 drops salt solution
• 2 dashes Angostura aromatic bitters
• 60g frozen pineapple
• 0.5 oz acid-adjusted pineapple juice
• 1.5 oz coconut mix
• 1.5 oz gold rum
• 0.25 tsp xanthan gum (I pre-blended into the coconut mix)

That’s the recipe, more or less. Coconut mix ahead of time with xanthan gum blended in. The realistic glass bamboo straw is from Surfside Sips . Code SHAKENUP gets you 20% off if you want one.
