Bread Pudding with Vanilla Sauce

Taco Bake Casserole

Ingredients:
1 lb ground beef or turkey
1 small onion, diced
1 packet taco seasoning
1 can black beans, drained and rinsed
1 can corn, drained
1 cup salsa
2 cups tortilla chips, crushed
2 cups shredded cheese (cheddar or Mexican blend)
1 cup sour cream
1/4 cup chopped green onions (for garnish)

Instructions:
Step 1: Preheat Oven
Preheat your oven to 350°F (175°C).

Step 2: Cook Meat
In a large skillet, cook the ground beef or turkey over medium heat until browned. Add the diced onion and cook until softened. Stir in the taco seasoning and cook according to package instructions.

Step 3: Combine Ingredients
In a large mixing bowl, combine the cooked meat mixture, black beans, corn, and salsa.

Step 4: Layer Casserole
In a greased 9x13-inch baking dish, layer half of the crushed tortilla chips, followed by half of the meat mixture, and half of the shredded cheese. Repeat the layers with the remaining ingredients.

Step 5: Bake
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Step 6: Serve
