To Market, to market! This morning, we shipped three of our hogs. (One jumped off the trailer). This scale is tiny compared to industrial operations. (The largest hog operation in the US is Chinese-owned WH group. It processes 50 million hogs per year!!!)We raise our pigs in a system that lets them express their “pig-ness.” Instead of being confined or crated, our hogs spend their days outside rooting out our invasive multiflora rose and bush honeysuckle. We are proud to provide meat that is raised with respect for the livestock and the land.

It’s May 20th, time for the bulls to go into the spring cow herd for March 1 calves. This morning our big angus bull ignored the heifers we are retaining for Mt. Folly Beef, then was just a little rude. Call Miss Manners!

This morning, I walked in the footsteps of William Hays, who surveyed this land in 1783 for Daniel Boone. Now, we are raising rye and wheat here, for Boone’s Settlement Wheated Rye Whiskey.

Mt. Folly hogs are in the holler! We just moved them to their summer home, where they will root out invasive such as bush honeysuckle and multiflora rose. But the first thing they did was chow down on acorns and walnuts.

At Mt. Folly, the winter peas are blooming! This means they are putting their energy into reproduction rather than growth. For organic farmers, this means nitrogen has been stored in the soil, and it’s time to harrow in the plants for biomass, plant organic corn.
