Happy Harvest!

Did you know we pick our grapes in the middle of the night? Why?

Increasingly, wineries are choosing to pick their grapes in the dead of night. We start our pick at about 3 a.m. until 6 a.m. The evening, cool temperatures mean cool fruit! This helps concentrate the aromas and flavors and gives the winemaker better control over the fermentation process. It keeps the brix (sugar levels) more stable and less oxidation of the fruit!

Also - its energy-efficient! We use less energy since the grapes are cool, we don't have to cool them down, using less energy and helps create a more efficient process.

Veraison: When Grapes Turn Red

One of the most important moments in a grapevineโ€™s annual lifecycle is the onset of ripening, when the grapes turn from green to red and naturally begin to sweeten. The French call this process veraison (โ€œverr-ray-zohnโ€).

Veraison is very much the tipping point in a grapevineโ€™s annual lifecycle. Itโ€™s when the vine alters itโ€™s focus from energy creation (through photosynthesis) to energy consumption where it concentrates its energy into making sweet grapes.

The changing color (anthocyanin) and development of other polyphenols act as protectors to the grapes from sun, wind and other stresses.

Following the onset of veraison, the ripening process then takes anywhere from 30โ€“70 days for the grapes to become fully ready to make wine!
