Slaw always seems to go with summer meals. Let's try Red Cabbage Microgreen slaw!
1 cup shredded cabbage.
1/2 cup Red Cabbage Microgreens.
1 grated carrot.
1 tbsp olive oil.
2 tbsp apple cider vinegar.
1 tsp honey.
Salt & pepper to taste.

In a large bowl combine the cabbage, carrot, and microgreens.
In a small bowl whisk together apple cider vinegar, olive oil, and honey. Season with a pinch of salt and pepper.
Pour the dressing over the vegetables and tossed thoroughly to coat.
Let stand for 5 to 10 minutes.

Something light for summer
Easy crustless microgreen quiche
1 cup Microgreens broccoli
1 cup Microgreens radish
1 cup chopped mushrooms
6 oz of Swiss cheese
Five eggs whipped
Add microgreens and mushrooms to a greased pan
Add Swiss cheese and pour eggs over mixture with maybe a little milk.
Bake in the oven at 350
