If you would’ve asked me just one year ago what I knew about wine - I’d tell you I knew how to drink it (and that I’d be hurting the next morning).

One year into making wine and we’ve made approximately 200 bottles! 🎉

I say approximately, because we spilt some one time, we drink some every time we rack/bottle, and because I honestly don’t write down the number count on every batch to look back at later.

Thank y’all for supporting and trusting us through this fun and very experimental process. We’ll have some new batches and flavors coming out soon (peep those last two bottles 👀).

We’ve decided to step away from the waitlist, so don’t worry you haven’t missed anything, yet! Once they are 100% ready to roll, I’ll announce them.

Update on the wines - strawberry and muscadine have been bottled, we’re just finishing up the labels and packaging details. Peach will be ready to bottle in a few weeks!

It’s wine season! 🥂🍷

It’s looking like our muscadine and strawberry wine will be ready in a week or two and our peach wine, shortly after the new year. 🥂

Last year we were proud to share with our closest family and friends, but because these are such small, intimate batches we can’t keep up with who gets what and how fair it is to this person and not that person. So, this year we’re doing it a little different and it will be first come first served, through a waitlist.

I will not know an exact bottle count until we bottle (some gets lost in the filtering process) but I do have an estimate of 15-20 bottles of strawberry wine, 35-40 bottles of muscadine (traditional not scuppernong), 35-40 bottles of peach.

Also, because it’s wine, we can’t legally sell it. At the bottom of the waitlist form I will have information on how suggested donations can be made to help us out with our time, supplies, love and labor.

The waitlist WILL ONLY BE through Google Forms. I will post/share a link Tuesday night (December 13th) at 8pm. So, set an alarm if you don’t want to miss out!

I will not accept or respond to texts, Facebook messages, Instagram messages or phone calls regarding this waitlist. Please fill out the form if you want to be on the waitlist and specify which flavor you’re interested in. I will start with one bottle per person, and then if there are any left after the first round, I will gladly open up a round 2.

Once the wines have been bottled, I will go through these forms in order they are received and reach out to each person regarding donation type and pickup or shipping.

I am open to shipping, but recipient is responsible for shipping costs and understands that I will package it as carefully as possible, but once it’s in the hands of the postal service I have no control of it’s state upon arrival. Tracking will be provided.

Wine racking day! I’m working through racking all 5 of the carboys that we have full of wine.

What’s racking, you ask? Racking is where you move the wine from one carboy (the 5 gallon glass jug) to a clean carboy in hopes of eliminating the sediment that has settled during the month.

This is and this is the first time it’s getting racked. Before it was in this carboy, it was in a primary fermentation bucket (as muddled strawberries). Each time wine gets racked, you keep eliminating more and more sediment (or wine pearls if you’ve watched Wine Country 😂 ) until it’s ready to be filtered and bottled. We currently have peach, muscadine and this strawberry in the making, with scuppernong in the lineup!

Peach wine in the background, and the primary fermentation stage of the muscadine is happening in the bucket.

The other day I shared the muscadines before they were mashed, this is the next step! All the must (the mashed up goodness) is contained inside a mesh bag, a little bit of water and sugar is added and then the yeast/nutrients get stirred in.

The bucket gets sealed with an air lock and stirred every few days.
