A couple weeks ago, I went to a game night with some friends and it was potluck style. I offered to bring dessert, because (if I’m honest) I’m trying to step up my dessert game.

So I decided to make a cookies and cream poke cake and try my hand at making a peach cobbler dump cake. Both desserts went over well; I barely had any peach cobbler cake left to bring home for myself! I’m glad to see that I’m able to improve my dessert game a little bit.

Happy National Ice Cream Day. As hot as it has been lately, a scoop of ice cream is the perfect treat to enjoy. Had to swing by Publix a few weeks ago while they had their ice cream BOGO (Buy One, Get One Free) and grab some of my favorite flavors in my favorite brand.

What’s your favorite ice cream flavor? A couple weeks ago, I had a poll asking what people thought mine was. People voted that the Vanilla was my favorite…but would you believe it that the cookies and cream is my favorite? Iva actually already eaten it all 🤣🤣🤣

Good morning! It’s time for breakfast.

I know I’ve been MIA for a good minute, working on a few different projects (including one that I will reveal very soon 👀), but I’m back again in the kitchen now. And the first thing I made was a country breakfast, featuring my Brown Sugar Bacon. This bacon is the perfect balance of sweet and salty and a great compliment on any plate. About The Love of … Food & Education.

Life has been … yeah. Had to disappear to focus on some personal goals and I’m near the end of the road. Which means it’s time to focus and shift my attention on some new goals.

One thing about me is that I love learning. I always say I’m done studying or being a student only to find myself passionate about another topic.

Food has always been a passion of mine, but over the last couple years, I’ve been very interested in learning more about nutrition in general. So I’ve been buying. Books to study nutrition more in depth. Who knows, maybe I’ll become a certified nutritionist. Or maybe I’ll write my own cookbook based on knowledge I gain and experiences I conduct in the kitchen. 🤔

First things first, Happy New Year!
Second thing, what yall making for dinner tonight? Cuz I might run this back.

Pasta bakes are a great way to create a fulfilling meal for a group of people. In this case, a friend and his family who just had a baby and needed a break from tryna find something palatable to get by (his words not mine). So I found a Pinterest recipe and added my own to it. You know me, , , just some good ol .

Now : instead of just baking the chicken, I decided to grill it in order to add some more flavor to it, and I lightly steamed the broccoli before tossing my them together with the pasta. And of course, had to add plenty of cheese.

What was the end result? A Grilled Chicken and Broccoli Alfredo Penne Bake that was a major hit for the family (they were texting me 5 minutes after I dropped it off saying it was fire!

Hoping that this year, I get more into the kitchen and experimenting and sharing these recipes with you all throughout the year. Stay tuned for more!

About The Love of … Turkey.

Fun fact: I’ve NEVER cooked a whole turkey by myself! No, for real; I’ve made turkey wings and wing tips, but not a whole turkey. My family don’t really like turkey cuz it tends to be dry.

But I was asked by some friends to make a turkey for a Christmas gathering last night; they even bought the turkey for me to make. And I think I can safely say that the turkey was a hit. It smelled delicious, and everyone say it was delicious. You know, , , just some good ol’ .

Now, ima tell you, listen closely, and here: here is how I found a way to make the turkey juicy. I made a compound butter rub with butter, garlic, fresh herbs and seasonings, rubbed it on the turkey and baked it off. Then, I poured off the juices and drippings from the turkey, simmered it with some extra herbs and spices and thickened it up to make a rich gravy to pour over the top for extra moisture.

Again, I got positive feedback from everyone about the turkey so I think I got a good solid recipe for next Thanksgiving!

About The Love of … Teaching.

Meet Mr. Kevin. I was introduced to him over the summer by a mutual friend. Mr. Kevin was looking for someone who could teach him a few simple dishes he could cook at home on his own; at 71-years-old, he had never learned to cook and now wanted to learn.

Over the past few months, I went to his house once a week and taught him a few basic kitchen skills and shared a few recipes for him to learn on his own. Slowly he grew more comfortable in the kitchen and began to experiment on his own until he learned how to create his own meals from ingredients in his kitchen. And best of all, we slowly pulled him away from so much processed cooking to using real, whole ingredients instead.

Teaching people how to cook was never something on my agenda, but this was such a unique opportunity and I’m grateful that Mr. Kevin entrusted me to teach him all that I knew about cooking to improve his way of living. During his last lesson, he told me that I helped to improve his quality of life and he’s thankful that I’ve given him confidence to get into the kitchen and do more than shove takeout in the fridge.

Are you eating your greens?

We may not have liked them as kids, but as adults, eating vegetables have some benefits to us. But they also help add some color to your plate too when you tryna make , , just some good ol’ .

Now, obviously, fresh produce is the best route to go, but let me tell you, ain’t nothing wrong with getting bagged/frozen or canned. If you had to choose though, get them frozen because the nutrients are level with fresh without the sodium needed to keep them in the can. And you can pop them bad boys in the microwave and you got your side dishes ready in under 5 minutes (don’t forget to season them!).

About The Love of … Struggle Meals.

Listen, it’s hard outchea, okay? Let’s not even act; everything is getting more expensive these days and sometimes, you gotta fall back on a simple dish to make it through. You know, , , just some good ol .

You may have heard of “struggle meals” before. A struggle meal is essentially a simple, basic, inexpensive dish that you can make to hold you over. No fancy ingredients, no special spices, no flair or razzle dazzle. Usually these are quick and easy and can be made with ingredients you might have shoved in the back on the pantry.

But a struggle meal doesn’t have to be boring. Here is one of my favorite struggle meals; chicken, beans and rice. Some pan-seared chicken thighs, green beans, black beans and yellow rice. This whole meal cost me roughly less than $10 to make and I had enough to stretch for three meals. Hey, it gets the job done.
