A 53&57 day dry aged tbone. Seasoned with S&P, covered with dry wagyu tallow, and dressed with fresh rosemary and thyme. Gunna sous vide to a rare/medium-rare. Then slap on the grill to bring in the New Year. Mmm 😋

Some different cooks on some of my dry age. Generally wet aged for about 10-20days and then generally dry aged in my temp and humidity controlled dedicated fridge with UVC LIGHT and thermal buffers for 45-60 days. Some ribeye and some porterhouse.
