Better late than never right? About 12 elephant garlic cloves going in. I learned this winter that if garlic is not exposed to enough cold days it doesnโ€™t divide into cloves, instead it just makes a solid ball of garlic. This happened to some garlic a few years ago and I didnโ€™t know why then but to be honest it was kind of sweet โ€ฆ โ€˜cause I love garlic, I donโ€™t love peeling cloves. Gonna try to do it bigger scale on purpose next year for chefs. ๐Ÿง„

Baked Samosas for my soul I have mentioned how food memories (or the lack of food resources at times) have impacted and shaped my life, and fuel my research. In my first foster home many years ago, in which I didn't stay long, the neighbors would feed me samosas. I don't remember their faces, but I remember the first time I bit into one. Sitting on concrete steps, alone, and the crispy triangle. Little did I know that this would be a moment that would solidify the power of food for me. I am using Spice It Up recipe for Baked Vegetable Samosas (recipe available in her Instagram highlights). I have made many of Freda's recipes and they are not only approachable, but incredibly delicious. The recipe is amazing. I cannot recommend making the filling more highly. It is pure magic and came together in minutes. I used both potato and kohlrabi from The Potato Homestead, because kohlrabi is an incredible potato cousin. If you prefer not to eat potato or kohlrabi, I bet it would be INCREDIBLE with steamed or roasted cauliflower. As a filling for samosa, or a perfect side dish. MAGIC. For the wraps/tortilla: I used homemade cassava amaranth tortillas that I make for us, but I bet Siete Family Foods would be amazing for those of us who cannot tolerate gluten. It was therapeutic to shed some tears and feel the love in my kitchen as Jorge and I assembled the parcels. Inviting my four-year-old self to the counter and nourish. We enjoyed them with mint raita to dip in! Thank you, Freda for sharing your brilliance. Although you are an ocean away, you have brought joy by sharing with the world. Today I celebrate our lives, and our resilience. And my love of kohlrabi ๐Ÿ˜‚

This is one of our favorites. It's Jorge's all time favorite. Skipping the highly processed ingredients in our interpretation of a โ€˜Tres Lechesโ€™ and rely instead on whole, fresh goodness. ๐Ÿ“ We roast sprouted amaranth and parsnip, alongside delicious turnip from The Potato Homestead to make a beautiful fresh fresa (strawberry) atole, and soak it through a wonderfully vanilla bean sponge cake, speckled with love. The perfect cake for a warm day. Garlic Scapes โ€“ one of my favorites. I was first introduced to them by neighbors of my foster family as a teen. One day the neighbor asked through the fence if Iโ€™d ever had, she said โ€œtake a biteโ€ โ€ฆ Iโ€™ve never forgotten that moment. ๐Ÿคฏ Garlic scapes are the immature flower stems of garlic. I reached out to neighboring farmers market vendors (whom I purchased scapes from) The Potato Homestead to confirm that scapes are removed when they begin to curl so that the plant focuses most of its nutrients into bulb production. If they arenโ€™t removed, the bulb can be very small. Makes sense. This incredible life source is programmed to focus all its energy (nutrients) into the flower, but once removed, all that energy is shifted towards the bulb for another favorite: garlic. โญ๏ธ Nutrients: Garlic Scapes have a concentration of allicin, flavonoids, and an incredible potential in antioxidants. A combustion of nutrients ready to go. โญ๏ธ *Taste: when raw-mild garlic with a spicy kick, has a crunch like raw asparagus. Sautรฉed- the lightest essence of garlic. Grilled- (favorite) Tastes like an onion and a garlic having happy times under the disguise of tender asparagus texture. *according to my palate โญ๏ธ How to: There are many recipes online. My neighbors then were Chinese, and the most memorable dish was a beautiful bowl of stir fried scapes with rice. I cannot remember her name, but she said that scapes were used in Korean foods and many other countries. I havenโ€™t confirmed this, but Iโ€™d love to find out. In pictures I show how we ate scapes last night. I sautรฉed chopped scapes in avocado oil and sea salt for 10 minutes to infuse smashed black beansโ€ฆyum. I also treated them how we grill scallions for tacos (Cebollitas Asadas), which for many are a must. After 10 minutes on a lightly greased grill pan, the scapes become soft, sweet, and caramelized.
