You can't rush perfection. But you CAN get first dibs. 🍾

Today we bottled our 2025 Blanc de Pinot Noir Sparkling Wine — and we are beyond excited to bring you behind the scenes!

Here's the science behind those gorgeous bubbles: at bottling, we introduce a very precise blend of sugar and yeast — called the tirage — into the base wine. Once sealed, the yeast immediately goes to work, kicking off a second fermentation right inside the bottle. The CO₂ it produces creates those impossibly fine, delicate bubbles that define a truly exceptional sparkling wine.

No injected carbonation. No shortcuts. Just science, precision, and an unwavering commitment to doing it the right way — the traditional method.

From here, these bottles head into our tirage bins where they'll rest for approximately 18 months, slowly building the complexity and texture that make this wine worth every bit of the wait.
