Time for another favorite! And this one is NEW: even to us! See, a customer stopped by this morning and while visiting he mentioned this dessert that his family enjoys. He gave me the method and I was intrigued. With it being Farmer Matt’s birthday (he LOVES pumpkin!) I initially made it out of curiosity (and to try something new for Matt’s birthday), but we sure are glad we did! It’s easily a new fall staple! Even our popcorn (and sweet skeptic) family member reluctantly tried it, but then went back for SECONDS stating “WOW Mom! This is really good!” Needless to say: It’s a must try! And, thank you to the kind customer willing to share!

For the pumpkin pie layer (bottom) you can really use any pumpkin pie recipe, but we typically use Pioneer Woman (Ree Drummond) recipe. So, that is the one we will list below.

Pumpkin Pie Dump Cake
Pumpkins pie layer (Recipe by Ree Drummond)
15 oz pumpkin puree (we used 2 cups)
1 1/4 cups heavy cream
1/2 cup granulated sugar
1/4 cup packed brown sugar
2 tsp. Pumpkin pie spice
1 tsp vanilla (we used vanilla bean paste)
1/2 tsp. Kosher salt
1 large eggs plus 1 large egg yolk
1 Box yellow cake mix
1 stick salted butter

Stir together the pumpkin purée and heavy cream. Slowly whisk in both white and brown sugar. Add pumpkin pie spice, vanilla, kosher salt and eggs plus egg yolk. Whisk.

Pour pumpkin layer into 9x13 in casserole dish. Sprinkle with 1 box yellow cake mix. Drizzle 1 stick (1/2 cup) melted butter over cake mix.

Bake at 350F for approx. 45-50 minutes until center is nearly set. Let cool. Serve warm with cream.

Time for another family favorite! Delicata is sweet and slightly nutty with tender skin that doesn’t require peeling! Easy to cut and perfect for roasting! This side dish pairs easily with a variety of meals, easy to prepare and delicious!

Roasted Delicata with Parm
1 large delicata squash
1/4 cup Parmesan
Sprinkle: garlic powder, kosher salt, pepper, olive oil

Cut squash in half length wise (make two boats). Scoop seeds out with spoon and discard. Turn squash over to provide sturdy bottom and cut through skin side to make half ‘moons’. Place squash moon in bowl and drizzle with olive, sprinkle with kosher salt, pepper and garlic powder. Top with Parmesan and toss.

Layer on cookie sheet and sprinkle with a little extra parm. Bake at 425F for about 30 minutes. Squash will be tender and parm caramelized/golden.
