Not all EVOO standards are created equal 🫒

Free Fatty Acids (FFA) are tiny fat molecules that break away from the oil structure over time. Lower FFA, means fresher, higher-quality olive oil.

While global EVOO standards allow up to 0.8% FFA, California standards are stricter at 0.5% or less a sign of fresher olives, faster milling, and tighter quality control.

At Cobram Estate, olives are picked and pressed within 4–6 hours which preserves freshness, flavor, and quality.

3 large leeks, cleaned and cut into 1–2 inch pieces
Cobram Estate Extra Virgin Olive Oil (Classic Flavor)
Salt & black pepper

Cream sauce:

2 tbsp EVOO
1 tbsp flour
2 cups heavy cream
2–3 garlic cloves, finely chopped
Fresh nutmeg (¼ tsp)
1–1½ cups Parmigiano Reggiano

Topping:

Breadcrumbs (¾ cup)
Italian herbs (1 tsp)
Extra Parmigiano Reggiano
