Loved teaching a sold-out sourdough starter class at Crystal Lake Public Library tonight.
Having grown up in Crystal Lake and raising my kids there (for the most part), it felt really special to be back at the library where I’ve spent so much time…this time sharing something I love.

Hello!

Many people have been asking where and when I’ll be popping up next. First, thank you. I’m so grateful for your support and so thrilled that you enjoy my bread and baked goods.

As I’ve shared, I’ve scaled back quite a bit. What many might not realize is that producing large quantities of dough and baked goods is incredibly physical work. Those dough bins are heavy and being on my feet for 12+ hours is taxing. I’ve been dealing with a back issue that has worsened since last winter, and the long production/bake days literally put me out of commission for a day or two afterward.

I love being active. I walk, lift, and practice yoga, but lately even a 30-minute walk with my dog causes major pain. I’m not able to exercise right now which has really dampened my spirit. PT hasn’t helped much, but I’m finally getting a spinal injection this week and am really hoping for some relief.

I’ve also needed to return to work, and I’m in sales, which will involve some travel. As I get a feel for this new schedule, I need a little time to see what’s realistic for baking. I’d love to be able to do bi-monthly pickups if I can swing it, but that remains to be seen.

I truly love baking for this community and appreciate every one of you who has supported me, especially those who’ve stuck with me through all the changes and evolutions of this tiny business. I hope to be back at it soon.

PS: I just ate the last bite of a Maple Walnut scone, and I think those might be my favorite yet. Here’s hoping there will be more of them, and more baking days, soon.

I may be offering very small pickups here and there…and sooner rather than later. I just don’t know. I will update here as it all unfolds. Thank you!

Don’t forget to get your orders in for pickup at Sandy Oaks Farm Market this Saturday! Our last time there this season!

I’m excited to bring a few new things this week:

Caramelized Onion & Gruyère focaccia! All the best parts of a true French Onion soup (hold the beef stock & wine)…sweet, deeply caramelized onions, melty and nutty Gruyère cheese, and a bit of fresh thyme all on our bubbly focaccia.

Caramel Apple Pie Focaccia: Sweet focaccia with spiced apples, and crumble topping, and finished with a drizzle of homemade caramel sauce. Delicious for breakfast and decadent enough for dessert.

Maple Walnut scones- Tender & flaky scones studded with lots of walnuts and then topped with a maple glaze. A true fall treat!

I’ll also have lots of tried and true favorites, like these Rye Dark Chocolate Chip Pecan Pretzel cookies. 🍪🍫🥨

Beautifully caramelized, blistered, and crackly crust Signatures for class tonight (and one for us!).
This loaf remains my most popular bread and our personal “plain” favorite.
I developed this formula years ago and went through several iterations to get it just right.
100% organic, all IL grown and stone milled flours for better nutrition and flavor. No processed white flour to be seen. Supporting regenerative farming and our Midwestern grain chain.
Wheat, spelt, & rye flour, purified water, and salt…that’s it.
Excited to teach more folks about the magic of sourdough tonight, and share some bread. 🩷
