Into the Smoke BBQ is a fledgling BBQ catering business, started by me, George Knaack. I have had a passion for cooking and especially barbecuing for many years. Prior to starting the business in 2014, I had hosted numerous private events. I had also been catering parties for friends and family for years. In 2014, I decided to change my career path and sold the majority of my reptile collection in

order to start Into the Smoke BBQ. In 2015 I enrolled in the Hospitality and Restaurant Management program at Le Cordon Bleu, which I am still attending today. This has given me much more insight into running a food service operation. In 2015, I also started helping my friend Balt run concessions twice a month at the Scott Smith’s All Animal Expo in Wheaton IL. Together we have worked on providing a selection and quality of food that you do not find at many event concession stands. This has provided me with a great opportunity to help hone my culinary skills. In 2016, I plan on continuing to help run concessions at the Scott Smith’s All Animal Expo. Come spring and summer, I also have plans to setup at some of the other local events and festivals. If anyone is looking for quality BBQ for an upcoming event please keep us in mind.

Our Story

Into the Smoke BBQ was formed in 2014 with the encouragement of many family members and friends. I have enjoyed cooking and especially barbecuing for several years and this was my way of sharing my passion with the public. We pride ourselves in serving quality food that has been prepared with our own unique and homemade sauces, marinades and rubs.

The business has expanded to provide BBQ at many private and charitable events. We provide concessions to numerous events being held at the DuPage County Fairgrounds. Recently we had the awesome opportunity to cook for the cast and crew of a major Hollywood movie that is scheduled to be released later this year.

In the future, we anticipate bringing some of our rubs and BBQ sauces to the retail market. We are also considering opening a brick and mortar restaurant. We are very optimistic and excited at when the future holds.
