🍋🌿 One of our favorite cocktails to drink with Lao food is a boozy lemonade. Here is a recipe we love! 🍋🌿
Recipe: Thai Basil Lemon Gin Fizz

2 oz organic gin
1 oz Lemon Thai Basil Syrup (scroll down for recipe 📜)
1 oz fresh organic lemon juice
Soda water (to top)
Ice cubes
Garnish: Lemon wheel and a sprig of Thai basil 🍋🌿

Organic Lemon Thai Basil Syrup

🚨 Allergens: None (based on common allergens)
Ingredients:

1 cup organic granulated sugar
1 cup filtered water
1 organic lemon (for zest and juice)
1 cup fresh Thai basil leaves (organic)

Equipment:

Saucepan
Zester or grater
Measuring cups and spoons
Fine mesh strainer
Glass jar for storage 🍯

Instructions:

1️⃣ Zest and Juice: Zest the lemon to gather about 1 tablespoon of lemon zest. Also, juice the lemon to get about 2-3 tablespoons of lemon juice.

2️⃣ Preparation: Add the water and sugar into a saucepan. Place this on medium heat.

3️⃣ Sugar Dissolution: Stir occasionally until the sugar is completely dissolved in the water. This forms your basic simple syrup.

4️⃣ Infusion: Add the lemon zest and Thai basil leaves to the saucepan. Reduce heat to low.

5️⃣ Simmer: Let the mixture simmer for about 10-15 minutes to infuse the flavors.

6️⃣ Add Lemon Juice: Stir in the lemon juice and let the mixture simmer for another 2 minutes.

7️⃣ Strain: Remove from heat. Strain the syrup through a fine-mesh strainer into a glass jar, removing the basil leaves and lemon zest.

8️⃣ Cool & Store: Allow the syrup to cool before sealing it. Store in the fridge. It should keep well for up to a month.
