Happy International Day of Rural Women! 🍂

Today we celebrate the women who help keep rural communities strong - caring for families, working the land, supporting neighbors, and pitching in wherever they’re needed. We also recognize rural women’s contributions to agricultural and rural development, food security, and efforts to reduce rural poverty. 🤍

Rural women do so much, often quietly and with a whole lot of heart. To all the rural women out there, Thank You!

Field Ready Harvest Chicken and Stuffing Casserole
~Harvest Meal Series~

Tender chicken and vegetables in a creamy homemade sauce, topped with buttery, savory stuffing. It’s warm, filling, and easy to prepare ahead for a busy harvest evening.

Serves: 6–8
Prep time: 25 minutes
Bake time: 30–35 minutes
Oven: 375°F

Ingredients

Chicken filling

* 4 cups cooked chicken, chopped or shredded
* 1 tablespoon butter
* ½ medium onion, diced
* 2 celery ribs, diced
* 2 cups frozen mixed vegetables, thawed
* ½ teaspoon garlic powder
* ½ teaspoon dried thyme
* ½ teaspoon seasoned black pepper
* Salt, to taste

Homemade creamy sauce

* 4 tablespoons butter
* ⅓ cup all-purpose flour
* 3 cups chicken broth
* ½ cup milk or additional chicken broth
* ½ teaspoon poultry seasoning
* ½ teaspoon seasoned black pepper
* Salt, to taste

Stuffing topping

* 1 package seasoned stuffing mix, about 6 ounces
* 1½ cups chicken broth
* 4 tablespoons butter, melted

Directions

1. Heat the oven to 375°F. Lightly grease a 9-by-13-inch baking dish.
2. Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion and celery and cook for 5–6 minutes, until softened.
3. Stir in the mixed vegetables, garlic powder, thyme, seasoned pepper, and a small amount of salt. Cook for another 2 minutes. Add the chicken and remove the skillet from the heat.
4. To prepare the sauce, melt 4 tablespoons of butter in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute.
5. Slowly add the chicken broth, whisking constantly to prevent lumps. Stir in the milk, poultry seasoning, and seasoned pepper. Simmer for 3–5 minutes, stirring frequently, until the sauce has thickened. Taste before adding salt because the broth and stuffing may already be salty.
6. Pour the sauce over the chicken mixture and stir until everything is evenly coated. Spread the filling in the prepared baking dish.
7. In a bowl, combine the stuffing mix, 1½ cups chicken broth, and melted butter. Toss gently and let it sit for 3–4 minutes so the stuffing can absorb some of the liquid.
8. Spoon the stuffing evenly over the chicken filling. Don’t press it down—you want the top to stay light and slightly crisp.
9. Bake uncovered for 30–35 minutes, until the filling is bubbling around the edges and the stuffing is golden. Let it rest for 5–10 minutes before serving.

Farm Wife Tips

* Rotisserie chicken works well when you need a shortcut.
* Turkey can be substituted for the chicken, making this a good recipe for Thanksgiving leftovers.
* If your family doesn’t care for mixed vegetables, use corn, peas, green beans, or carrots.
* Prefer a softer stuffing topping? Cover the casserole for the first 20 minutes, then uncover it for the remaining baking time.
* Serve with cranberry sauce, applesauce, or a simple side salad.

Make-Ahead Instructions

Prepare the chicken filling and homemade sauce, then spread them in the baking dish. Cover and refrigerate for up to 24 hours. Keep the stuffing mixture separate and add it just before baking.

When baking the casserole straight from the refrigerator, allow approximately 10 additional minutes and make sure the center is hot.

Field-Ready Tip

Spoon the casserole into lidded containers while it’s hot and pack it in an insulated carrier. Add applesauce cups, cranberry sauce, sliced apples, and cookies for a complete harvest meal that doesn’t require much fuss.

My hubs loves sauerkraut, but when I put it right on a pork roast when cooking it, I feel like it limits what I can do with the leftover pork. So I came up with a tangy, slightly sweet sauerkraut and mashed potato bake that lets us enjoy those flavors as a side dish, while keeping the pork roast free for sandwiches, tacos, or another supper later. 🤍

Farmhouse Sauerkraut and Mashed Potato Bake

A cozy side dish for pork, sausage, or roasted chicken.

Serves: 4–6
Bake: 375°F for 20–25 minutes

Ingredients

* Instant mashed potatoes, enough for 4 servings
* Water or broth, prepared according to package directions
* 2 tablespoons butter, divided
* 1 small onion, diced
* 1 teaspoon minced garlic
* 1 jar sauerkraut (about 24–32 ounces), drained
* Seasoned black pepper, to taste
* 2 tablespoons brown sugar

Directions

1. Prepare the potatoes according to the package, using water or broth. Stir in 1 tablespoon butter.
2. Melt the remaining butter in a skillet. Cook the onion and garlic until softened, about 5 minutes, taking care not to scorch the garlic.
3. Stir in the drained sauerkraut, seasoned pepper, and brown sugar. Cook for 5 minutes.
4. Spread the mashed potatoes in a lightly greased baking dish. Spoon the sauerkraut mixture over the top.
5. Bake uncovered for 20–25 minutes, until hot and lightly golden. Let stand 5 minutes before serving.

And if homemade mashed potatoes are your thing, use them! Make about four servings and spread them in the dish just like you would the instant potatoes.

Would your family try this slightly sweet-and-tangy side?

This harvest started long before the beans were ready. 🌱

It started with decisions made months ago, a forecast we couldn’t control, and a whole lot of faith that the work and input costs would be worth it.

A combine moving through a field is only one small piece of the season. Behind it are early mornings, long days, repairs, changing plans, rising costs for seed, fertilizer, and fuel, and commodity prices that can shift like the wind. Farm families watch the weather, the markets, and the crop - - hoping the numbers work out when the season is done.

Today, for National Farmers Day, I’m thinking of the farmers and farm families who put in the work long before anyone sees the harvest. Every field has a season of decisions, effort, and prayers behind it.

▶️ When you see a harvest like this, what part of farming do you wish more people understood?

🤠 Cowboy Cookies 🤠

These hearty cookies are loaded with oats, chocolate chips, coconut, and pecans - - a little bit of everything in every bite! They’re perfect for sharing with family or tucking into a lunchbox. And when I’m packing a meal to take out to the field, I like to tuck in a little something sweet, too. These cookies are easy to make ahead and pack along for a harvest treat.

Makes: About 3 dozen

Ingredients
• 1 cup butter, softened
• 1 cup granulated sugar
• 1 cup packed brown sugar
• 2 eggs
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt
• 2 cups old-fashioned oats
• 1 cup chocolate chips
• 1 cup shredded coconut
• 1 cup chopped pecans

Directions

1. Heat oven to 350°F. Line baking sheets with parchment paper.
2. Cream butter and both sugars until fluffy. Beat in eggs one at a time, then stir in vanilla.
3. In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the butter mixture.
4. Stir in oats, chocolate chips, coconut, and pecans.
5. Drop rounded tablespoons of dough onto the baking sheets, leaving space between cookies.
6. Bake for 10–12 minutes, until the edges are lightly golden. Cool completely before packing.

A sweet little addition to a field meal - - or a good cookie to keep in the cookie jar for whoever comes in hungry.
