When eaten in its raw form, broccoli microgreens are far superior to fully grown broccoli. In fact its not even close!
If you ate 100 grams of full grown broccoli, you would be fueling your body with 0.36 mg of Vitamin A, but if you ate that same 100 grams of broccoli microgreens you would be getting 221.8 mg of Vitamin A!
or 616x as much!!
How about Vitamin E?
100 grams of full grown broccoli has .78 mg of Vitamin E when eaten in its raw form, but that same weight of broccoli microgreens has 24.1 mg!
That means you would have to consume 3089 grams of full grown raw broccoli or 6.8lbs to get the same amount of Vitamin E as 100 grams of broccoli microgreens.
