The Rev. Canon Liam Helms wore his habit on Star Wars Day, feeling very holy and very dramatic… until a guy in a robe with a lightsaber stoped him and goes, “Ah, a fellow Force user.”

Canon Liam said, “Not exactly, I answer to a higher authority.”

He nodded real seriously and says, “Same. The Council can be difficult.”

They stood there for a second, both judging each other’s robes… and we are pretty sure they each walked away convinced the other one was in a cult.

Good classic Red Beans and Rice are on the menu for tonight! 

You know something good is about to happen when the Magnalite pot comes out to play. That’s when it gets serious, in the best possible way. Pork tips hitting the heat, andouille sausage bringing the smoke, and everything simmering low and slow with plenty of love mixed in. And of course, it wouldn’t be right without the glorious Trinity leading the way, heavy on the onion just like it should be. The kind of cooking that fills the house with that smell, the one that makes everyone wander into the kitchen asking, “How much longer?” This is comfort, tradition, and a little bit of joy all in one pot.

One little twist I always add: a handful of pinto beans. They melt down just enough to thicken everything beautifully and quietly boost the flavor of the red beans without stealing the show. It’s a small touch, but it makes a big difference, richer, heartier, and worth every extra minute on the stove.

For proofing, I create a controlled warm environment using a water-bath method. A large metal mixing bowl is filled with hot water, and a smaller bowl containing the dough is placed inside it without direct contact with the water. The thermal mass of the water gently transfers heat through the bowl, maintaining an elevated ambient temperature around the dough. The setup is then covered with a towel to reduce heat loss and limit air movement, promoting consistent yeast activity and accelerating the proofing process.
