The Cidery

The Cidery Founded in 2008, "The Cidery" is a small operation providing the option for "true cider", the farm-style drink rooted in Colonial America. (R.S.)

The Aaron Burr Cidery is devoted to the restoration of true cider in lower NY, where history, climate and terrain provide the makings for the perfect cider culture. We are the growers, the millers and fermenters of organic apples; we will remain small to observe absolute control over the product and to satisfy our lofty standards. Other cider-makers may provide market-friendly cider for less money

, but it is our role to reach the higher tastes by being true to cider as it exists in natural form. It all starts with the apples. We organically grow regional heirloom varieties, old-world cider varieties, and wild/ pippin variety apples. Currently we baby 400 trees (of over 50 varieties) making us the only orchard in the Hudson Valley growing apples for cider alone. In other words: this is not a "value-added" activity, this is everything to us. Further, we are advocates for the reemergence of cider throughout the Northeast because it is the environmental choice and the rightful dinner drink for the land. By fostering cider growth we can develop regional, varietal and artisanal differences as is currently associated only with wine. We encourage everyone to practice cider making for home consumption and support sharing. As it was, it shall be again, cider "the prince of beverages."

Dr. Bronner called, he wants his rant back…

January 6th has become for our self-important nation a sardonic celebration of political identity: two sides tirelessly picking at the details of who we are and who aren’t. Thankfully, other nations celebrate the day in positive terms. They call it Theophany, Epiphany, or the “12th Day of Christmas.”
In actuality, the holiday is far older than Christianity. The occasion marks the perceptible increase of daylight (northern hemisphere) and it’s truly the measure of the human year. The light is new, the light gives us hope. For if we can acknowledge the sun, we can also acknowledge everything under the sun. It’s a day of unity, a day of self-reconciliation, a day of faith. Nature will provide.
This is my wish for the coming year…
Look toward Nature, look toward Nature, look toward Nature. Never look away!!! To do so would be to praise the WRONG January 6th. Heed Fukuoka’s clarity, Nature is whole/ Man divides, and don’t obsess on our creations but instead worship something FAR greater. Yes, it’s true Man and his divisions are temporarily part of Nature (national boundaries, property boundaries, ideological boundaries, etc.) but they are a small part compared to the whole greatness. Look toward the greatness, not the petty. Turn to the sun and bask in that which unites, not divides. Nature gave us a New Year (not Man’s calendar) so do as Nature does and connect all!
To see all is to forgive all. We must embrace even the things we hate about ourselves because Nature excludes nothing. Bring it all in using the superpower that squashes our divisiveness, Love. It’s as simple as the Golden Rule, the ONLY rule: Love everyone as you’d love yourself. (They are you, actually, all is one!) Follow Nature and WORK toward inner peace, or it’s going to be a hard year otherwise!
Look toward Nature, look toward Nature, look toward Nature. And have a happy January 6th!

I'd like to explain my quote in yesterday's NYTimes, "Cider is about the life of the apple tree but most farms don't give the trees much of a life," (Hint: It's about dignity) Unfortunately, though, I'm sick in bed but we are in luck! POLLY will be there and the conversation goes on with cider to drink and books.

Today there is an exhibition of wild apples from around the country, part of an ongoing cataloging by at (Western Mass). For those who don't get the chance to forage and commune with wild apple trees, drinking wild cider and seeing/tasting seedling fruit is the next best thing. Wild apple trees are a sign from the Heavens, they're the glitch in the matrix, proving an alternative economy that modern people can't wrap their head around (and I'm NOT talking about money.) We farmers steer opposite their outcome but for my OPEN talk tomorrow i will address the reasons why. vs.
