Roasted Harvest Vegetables
A simple, healthy, and colorful sheet-pan meal.
Prep time: 15 minutes
Cook time: 30–40 minutes
Servings: 4
Ingredients
500g Cauliflower (broken into bite-sized florets)
500g Potatoes (peeled and cut into cubes or wedges)
2–3 Medium Carrots (sliced into rounds or diagonal coins)
1 Bell Pepper/Paprika (de-seeded and chopped into large chunks)
2 tbsp Olive Oil
Seasonings: Salt, Black Pepper, Sweet Paprika powder, Dried Parsley, and Dried Garlic (to taste).
Optional: Fresh dill for garnishing (as seen in your photo).
Instructions
Preheat the Oven: Set your oven to 200°C (400°F). Line a large baking sheet with parchment paper for easy cleanup.
Prepare the Vegetables: Wash and cut all your vegetables. Try to keep the potato and carrot pieces relatively uniform so they cook at the same rate.
Seasoning: In a large mixing bowl, toss the cauliflower, potatoes, carrots, and bell peppers with the olive oil. Sprinkle in the salt, black pepper, sweet paprika, dried parsley, and dry garlic. Toss thoroughly until every piece is evenly coated in oil and spices.
Arrange for Roasting: Spread the vegetables out on the baking sheet in a single layer.
Pro-Tip: Don't crowd the pan! If the vegetables are on top of each other, they will steam instead of roast. Use two pans if necessary to get those crispy edges.
Bake: Place in the oven for 30–40 minutes. Halfway through (at about 20 minutes), give the vegetables a gentle toss with a spatula to ensure even browning.
Check for Doneness: The dish is ready when the potatoes are fork-tender and the edges of the cauliflower are slightly charred and caramelized.
Serve: Transfer to a platter and garnish with a sprinkle of fresh dill or extra parsley if desired.

🍍 Baked Pineapple Salmon
A vibrant, 30-minute meal that brings a taste of the Pacific Rim to your dinner table.
Ingredients
The Salmon:
Salmon Fillets: 4 fillets (approx. 6 oz each), wild-caught or Atlantic.
Pineapple: 1 cup fresh pineapple chunks (or canned slices, drained).
The Pineapple Glaze:
Pineapple Puree: ½ cup (freshly blended or crushed).
Soy Sauce: 3 tbsp (low-sodium preferred).
Honey: 2 tbsp.
Garlic: 1 clove, minced.
Fresh Ginger: 1 tsp, grated.
Black Pepper: ½ tsp.
Optional Heat: ½ tsp red pepper flakes or sriracha.
For Garnish:
Fresh cilantro, chopped.
Sesame seeds (optional).
Instructions
1. Prep the Oven and Pan
Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
2. Prepare the Salmon
Pat the salmon fillets completely dry with paper towels. Place them on the prepared baking sheet, leaving about an inch of space between each fillet.
3. Whisk the Glaze
In a small mixing bowl, combine the pineapple puree, soy sauce, honey, minced garlic, grated ginger, and black pepper. Whisk until smooth.
Pro Tip: If your pineapple is very tart, add an extra teaspoon of honey; if it’s very sweet, add a squeeze of lime juice.
4. Marinate (Optional but Recommended)
Brush a generous layer of the glaze over the salmon. For the best flavor, let it sit at room temperature for 10–15 minutes before baking.
5. Bake to Perfection
Top each fillet with a few pineapple chunks or a whole slice. Slide the tray into the oven and bake for 12–15 minutes (depending on thickness).
For a caramelized finish: Switch the oven to "Broil" for the last 2 minutes of cooking until the glaze bubbles and turns golden brown.
6. Serve
The salmon is done when it reaches an internal temperature of 145°F or flakes easily with a fork. Garnish with fresh cilantro and sesame seeds.
Perfect Pairings
To make this a complete "celebration" meal, try serving it with:
Coconut Rice: Rice cooked with coconut milk and a pinch of salt.
Roasted Asparagus: Tossed in lemon juice and olive oil.
Cucumber-Avocado Salad: A cool, refreshing contrast to the warm, sweet glaze.
Storage & Reheating
Store: Keep leftovers in an airtight container in the fridge for up to 3 days.
Reheat: Avoid the microwave to prevent the fish from becoming rubbery. Instead, place it in a 275°F (135°C) oven for about 15 minutes until just warmed through.
