Meatloaf mashed potatoes bowl with corn on top 😋

I pulled some Meatloaf muffins out of the freezer from a few months ago that I had made with The Salty Sister's Meatloaf Starter, and The Salty Sister's Maple Bourbon BBQ Sauce. Chunked one up in a bowl and topped it with a couple scoops of mashed potatoes with a little of The Salty Sister's Ranch Hand seasoning mixed in, and then topped that with corn, a little butter, and another sprinkle of the Ranch Hand.

Chicken Corn Chowder
(Would be delicious with sausage or shrimp too! With shrimp, I would definitely use The Salty Sister's Offshore).

Ingredients:

4 cups fresh corn kernels (5–6 ears)

2 tbsp butter (or olive oil)

1 small yellow onion, finely diced

2 cloves garlic, minced

1 medium Yukon gold potato, diced small

3 cups vegetable or chicken broth

1 cup whole milk

½ cup heavy cream

Juice of ½ lemon

1 tsp The Salty Sister's Crazy Cousin Seasoning Salt

1 tsp The Salty Sister's SPG

Finish with freshly cracked black pepper & fresh chives!

Instructions:
In a heavy pot, melt butter over medium heat.

Add onion and cook until soft and translucent (about 5–7 minutes).

Add garlic and seasoning salt and cook for 1 minute.

Stir in diced potato and corn. Let everything sauté together for 2–3 minutes to deepen flavor.

Pour in broth. This is also when I add in the SPG!

Bring to a gentle boil, then reduce to a simmer for 12–15 minutes, until potatoes are tender.

Use an immersion blender to blend about half the soup (or scoop out 2 cups, blend, and return). This gives that creamy texture while keeping some whole kernels.

Stir in milk and cream.

Add lemon juice. (if needed you can season with salt and pepper to taste)

Add cooked chicken.**

Heat through on low - don’t boil after adding cream.

Ladle into large bowls and top with fresh chives!

Ribs on the Smoker for Memorial Day 😋🥰

Baby back with The Salty Sister's Maple Seasoning Rub, two slabs spare ribs with The Salty Sister's Barn Boy BBQ Rub, and one slab spare ribs with The Salty Sister's Hot Hunny Rub then a drizzle of Val's Hot honey.

I also did chicken legs with The Salty Sister's Hot Hunny Seasoning and Val's Hot Honey drizzled, chicken thighs with The Salty Sister's Maple Seasoning & a Maple Balsamic marinade ... along with Salt potatoes and Oriental Slaw. The Salty Sister's Maple Bourbon smoked BBQ Sauce on the side.

CHEESEY CHICKEN TORTELLINI BAKE

Ingredients:
• 1 (20 oz) bag cheese tortellini (slightly thawed if frozen)
• 2 cups cooked shredded chicken (rotisserie chicken or pre-grilled chicken work great)
• 3T The Salty Sister's onion soup/dip mix
• 1 3/4 cups beef broth
• 1 cup heavy cream
• 1 tbsp Worcestershire sauce
• Salt & pepper, to taste
• 1 tsp garlic powder
• 1 1/2 cups mozzarella cheese
• 1 cup Gruyère, Swiss, or provolone cheese

Instructions:
1. Preheat oven to 375°F.
2. Add tortellini and chicken to a greased 9x13 baking dish.
3. In a bowl whisk together:

• beef broth
• heavy cream
• Onion soup mix
• Worcestershire sauce

4. Pour over tortellini and stir lightly.
5. Season the whole casserole with salt, pepper, and garlic powder.
6. Cover tightly with foil and bake for 35–40 minutes if tortellini is thawed/refrigerated, or 45–50 minutes if frozen, until tortellini is tender.
7. Remove foil, stir gently, then top with cheeses.
8. Bake uncovered another 10 minutes until melted and bubbly.
9. Optional: broil 1–2 minutes for a golden cheesy top.

Change it up, make it your own. I make the seasoning homemade so you don't have to.

I splurged on a ribeye today because I saw a video on sous vide steak. I covered it with The Salty Sister's "Mimi’s Fav Co-Co-Coffee" rub, sous vide it, and crusted it up in a cast iron pan with mushrooms and onion. 😋
