Cantina Chicken Soft Tacos
Small flour tortillas 1 pkg.
pickled red onion 1 tsp. Per taco
CIlantro lime slaw 2 tbs. Per taco
Agave chipotle sauce 1 tsp. Per taco
Shreaded mixed cheese 1 cup for whole recipe
Seasoned chicken breast or thighs 1 pkg.
Taco seasoning 3 tbs.
Lime juice 4 tbs.
Olive oil 2 Tbs.
For the chicken
1 preheat grill to 300
Dice up chicken with combine with taco seasoning and lime juice and olive oil
Grill untill chicken is thoroughly cooked.
For the slaw
Combine 1 package of coleslaw mix 4 tbs. Of mayonnaise and 2 tbs of lime juice 3 Tbs. Of fresh cilantro salt and pepper to taste
You can purchase the Agave Chipotle sauce at Kroger in the Mexican food aisle
To make pickled red onion you need a Qt. Mason jar a lid and band you’ll need about 2 red onions 1/2 cup apple cider vinegar 5 Tbs. Salt 3 Tbs. White sugar 1/2 cup of water and 1 tsp. fresh black peppercorns 
1. Slice the onion on a kitchen mandolin
Fill jar 90% full with onion
2. Mix water vinegar sugar and salt and black peppercorns in a small pan bring to a rolling boil
Let boil for 3 min.
Pour boiling mixture over onions and fill mason jar to rim of jar.
Put on lid and band
Flip jar upside down on counter untill jar gets to room temperature
Once jar has cooled you can put it in your fridge to cool overnight
These onions should keep for 2 months.
To assemble the tacos
Place chicken on tortilla add 2 tbs. Of the slaw
Add 1 tbs of mixed cheese top with agave chipotle sauce garnish with pickled red onion
These tacos are better than most restaurants and there very easy to make.
