Sausage and Apple-Stuffed Squash Recipe

Servings SERVES: 4Preparation time PREP: 20 min.Cooking time COOK: 1 h.
Ingredients
1 lb. sausages, casings removed;
2 apples, cored and chopped;
1 onion, finely chopped;
1 celery stalk, finely chopped;
4 oz. mushrooms, chopped;
1 egg, beaten;
2 acorn squash, halved and seeded;
2 cloves garlic, minced;
1/2 tsp. ground sage;
1/2 tsp. ground cinnamon;
2 tbsp. olive oil;
Cooking fat;
Sea salt and freshly ground black pepper;
Stuffed Squash preparationPreparation
Preheat your oven to 400 F.
Brush the inside of the acorn squash with olive oil and season to taste with salt and pepper.
Place the squash on a baking sheet, cut side up, and roast for 30 minutes, until the flesh is fork-tender.
Melt some cooking fat in a skillet placed over a medium-high heat.
Cook the sausage until browned and set aside.
Add the onions, celery, garlic, and mushrooms to the skillet, and cook for 3 to 5 minutes.
Add the apples and season with salt and pepper to taste. Sprinkle the mixture with cinnamon and sage, and cook for another 2 minutes.
Combine the meat, the apple mixture, and the beaten egg, and mix well.
Divide the stuffing evenly among the squash halves.
Place the squash back in the oven for another 15 minutes.

Halloween is this Friday. If you're like me, you're ready to go to town on one of those mega-family size bags of Reese's Peanut Butter Cups. Or maybe you feel like you'll go mad if you don't get your chocolate or caramel fix soon (just like those Snickers commercials - are those accurate or what?...

Good luck to all on this Challenge. We can do this! Here is one of my easy go to dinners:
CHICKEN SOUP
1 32 oz carton of organic chicken stock (I use Kirkland brand)
2 cups water
3 chicken breast halves, cut into 1/2" chunks
1/2 cup thinly sliced carrots
1/2 cup thinly sliced celery
1 med. sweet potato, cut into 1/2" chunks
8 oz mushrooms
1/3 cup thinly sliced green onions
1/4 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Bring liquids to boil. Add chicken, carrots, celery and potato. Simmer for 10 min. Add mushrooms, green onions and spices to the soup. Simmer for 10 more minutes.
I also might add other veggies I have on hand like spinach, green beans, or cubed squash instead of potatoes. If you like a little kick, add crushed chili peppers or hot sauce!
