🥗🍂🍯 crispy brussels and a honey drizzle paired with roasted butternut, toasted pecans, and a handful of cranberries make the most delicious fall salad!

Roasted Vegetable Salad Ingredients:

Roasted Brussels Sprouts
· 3 cups Brussels sprouts, ends trimmed, yellow leaves removed
· 2 tablespoons olive oil
· Salt to taste

Roasted Butternut Squash
· 4 cups butternut squash, peeled, seeded, and cubed into 1-inch cubes
· 2 tablespoons olive oil

Other Ingredients
· 1 large purple onion
· 2 cups roasted pecans
· 1 cup dried cranberries

Balsamic Glaze
· 1 cup balsamic vinegar
· ¼ cup Carmichael's Honey 😉

Instructions
· Preheat oven to 375°F and line a baking sheet with parchment paper. Trim and halve the brussels sprouts, toss with olive oil and salt, then roast cut side down for 20 to 25 minutes, flipping during the last 5 to 10 minutes for even browning.
· Toss cubed butternut squash with olive oil and salt, spread in a single layer, add purple onion pieces, and roast at 375°F for 20 to 25 minutes, turning once halfway through until softened.
· Combine roasted Brussels sprouts, roasted butternut squash, roasted onions, roasted pecans, and dried cranberries in a large bowl.
· For balsamic glaze, whisk balsamic vinegar and honey together in a bowl. Drizzle on top just before serving to keep the salad looking bright.
