Is it even the weekend without Bacon?!
Rolled beef belly from Moraine Park Farms, dry-cured for seven days with brown sugar and salt, then hickory smoked. We’ve been making this one for a minute now and it still hits different every time.
Crisp it up for a BLT, get it crackling in a cast iron next to your eggs, or toss it on a salad for that extra umami situation. Or just eat it straight off the cutting board… no judgment here.
