Our Parmesan is ready!
Parmesan takes at least 1 year to age, and ours is officially ready.
It's on our website in 4 oz, 8 oz, and 16 oz sizes.
The great thing about Parmesan is that it gets better with age, so if you buy one, keep it in your fridge for years (vacuum sealed)!
That being said....
You probably want to know how to win a 16 ounce wedge of Parmesan?!?!
Well, you just have to answer a simple question. ⬇️

"How long does my Parmesan stay in a salt brine bath before it's taken out?"

I do have 2 rules.....
1.If you are NOT local or willing to pick up (Zillah,WA), you will have to pay for shipping.

We had the pleasure of using Wautoma Springs 100% Malbec wine to soak our Aged Gouda cheese.
This cheese is a 6 month Aged Gouda. Very creamy, nutty, buttery flavor. You really can taste the wine from the outside edge of the Gouda. This is such a fun way to try a cheese!
Our cheese was soaked in this beautiful wine for 48 hours. It made a deep purple rind, which is exactly what we wanted!!!!🍷🧀

About the wine:
Wautoma Springs 100% Malbec
Tasting Notes: fresh blueberries, espresso beans, thyme
Finish: dry, round, velvety tannins
Oak: 29% new French

This Sunday, July 26th, we will have our last Mercer Island Farmers Market for the year.

We will bring a SPECIAL cheese this weekend. Raw Milk Natural Rind Parmesan. It is aged almost 1 year and will be super limited in quantity.
Whatever is left (most likely none) will be available on our website.

This past week we attended the Washington State Black & White Show. We brought a few of our milk cows to compete against the best in our state.
We are so honored that one of our cows was crowned Grand Champion of the show.
Our other 2 cows did awesome as well!
