Mediterranean Angel Hair with Chicken and Bamboo Shoots
Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
2 cloves garlic, minced
1 bunch Swiss chard, stems removed and leaves chopped
2 medium fresh tomatoes, diced
1 cup Italian Salad Style Bamboo Shoots Pieces
8 oz angel hair pasta or similar
Fresh herbs (like basil or parsley), for garnish
Grated Parmesan cheese, optional for serving
Instructions:
Prepare Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-6 minutes per side. Remove from skillet and set aside to rest.
Cook Pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside, reserving about a cup of pasta water.
Sauté Garlic and Swiss Chard: In the same skillet, add another tablespoon of olive oil. Sauté the minced garlic for about 30 seconds, then add the chopped Swiss chard. Cook until the chard is wilted, about 3-4 minutes.
Add Tomatoes and Bamboo Shoots: Stir in the diced fresh tomatoes and Italian Salad Style Bamboo Shoots Pieces. Cook for an additional 2-3 minutes.
Slice Chicken and Combine: Slice the rested chicken breasts into strips. Add the chicken and cooked pasta to the skillet. Toss everything together, adding a little reserved pasta water if needed to create a light sauce.
Garnish and Serve: Sprinkle with fresh herbs and, if desired, grated Parmesan cheese. Adjust seasoning with salt and pepper.
Serve Warm: Plate the pasta and ensure each serving has a good mix of chicken, Swiss chard, tomatoes, and bamboo shoots. Serve immediately.
