Labor Day weekend has arrived and I’m hoping that everyone has a beautiful few days spending it doing whatever it is that you love to do the most!

🧁 Cotton Candy Cupcakes: 
1 1/4 cup and 2 tbsp 1:1 GF flour 
1/4 cup Javamelts French Vanilla Sugar 
3/4 cup and 2 tbsp regular sugar 
2 tsp baking powder 
1/4 tsp salt 
3/4 cup almond milk (room temp)
3/4 cup vegetable oil 
1 1/4 tsp cotton candy extract 
3/4 tsp vanilla extract 
3 eggs (room temp) 
 Combine all dry ingredients in bowl and whisk together. In mixer, combine all wet ingredients and mix on low 10-15 seconds. Slowly add in dry ingredients, mix on low until combined then on medium for 60 seconds. Let sit for at least 5 minutes so the GF flour gains the moisture. 
This batter will be wet. 
 Bake on 350 for 16-20 minutes depending on your oven. Toothpick will come out clean when done. 
 🍭 Cotton Candy Frosting 🍬 
1/2 cup butter 
2.5 cup powder sugar 
1 tsp cotton extract 
1/4 tsp vanilla extract 
Sprinkle of salt 
3-4 tbsp almond milk 
 Beat butter in mixer until creamy. Next add salt. Gradually add your powdered sugar, mixing after each add. While you have the mixer on medium low, add in your almond milk a little at a time. Increase speed and mix for about 30 seconds. Add in extracts and stir well. Once cupcakes have cooled, pipe with frosting. Coloring optional.

Happy 37th Wedding Anniversary to me and Tony!

We are so blessed with 3 beautiful daughters, 2 incredible son-in-laws, two adorable healthy grandchildren and a boyfriend who is another wonderful addition! We also have our parents alive and living relatively healthy, independent lives. They each have 7 great-grandchildren and more on their way!

The rings in my video reminded me today of how you keep going through the years, in the good times and the bad times and YOU NEVER GIVE UP!

How to make:

To make rings:
Instant coffee (1-2 tsp)
Javamelts Flavored Sugar of choice (1-3 tsp) **hazelnut, caramel, mocha, french vanilla or a combination of two!
A little hot water (1-3 tsp) - mix well
Dip your frothing wand in and create the rings
Add ice
Pour in milk of choice
Add a shot or two of coffee
Add more Javamelts if desired

Caramel Pumpkin Butter Board

1/2 cup pumpkin puree
1/4 tsp pumpkin seasoning
1/2 cup of salted butter - room temperature
2-3 tbs Caramel Flavored Sugar
Topping:
1 tbs dried cranberries
2 tbs pepita seeds
(Optional: add your favorite chopped nuts, sunflower seeds or any others you might like)
Serve with your favorite bread - warmed or toasted, rolls, breadsticks or crackers

Milk of choice add as desired
1 tbs Caramel Javamelts Flavored Sugar - adjust to taste
1 tbs pumpkin spice syrup - adjust to taste

Coffee Caramel Pumpkin Iced Cubes (make to taste)
Brew coffee
Add Caramel Javamelts
Mix well
Pour into mold
Freeze for 3-4 hours until completely frozen

Flavored Whipped Coffee

2 Tbs Instant Coffee
2 Tbs hot water
2 Tbs Javamelts Flavored Sugar

Whip with frother until light and fluffy

Pour on top of in half and half or any kind of milk. Enjoy hot or cold!

I have a question: “Who loves Donuts?” 🍩❤️🫶☀️👇

* Dry Ingredients:
* 1 ½ cups gluten-free 1:1 baking flour
* ⅔ cup Javamelts granulated sugar
* 2 teaspoons baking powder
* ¾ teaspoon salt
* ¼ teaspoon nutmeg
Wet Ingredients:
* 2 eggs
* 2 teaspoons vanilla extract
* 1 teaspoon apple cider vinegar
* ¾ cup unsweetened almond milk or milk of choice
* ½ cup oil

For the Cinnamon Sugar:
1/2 C Javamelts 1 to 2 tbs of cinnamon- mix well

For the Glaze:
* 3/4 C Javamelts 3/4 C powdered sugar
* 1-2 tablespoons milk

* Preheat the oven to 425F. Lightly grease two 6-cavity donut pans with cooking spray.
* In a large bowl, whisk together the dry ingredients. In a separate bowl, whisk together the wet ingredients until well combined.
* Add the wet ingredients to the bowl with the dry ingredients and whisk until evenly combined.
* Pour the thick donut batter into a large Ziplock bag or piping bag. Cut a 1-inch hole in the corner of the bag and pipe the donut batter into the prepared doughnut pan.
* Bake the gluten-free doughnuts for 10-12 minutes. Remove from the oven and turn out onto a cooling rack. Let the homemade donuts cool on a wire rack for 15 minutes before glazing.
* In a medium bowl, whisk together the powdered sugar, milk and vanilla extract until smooth. You want the glaze to be thick enough that it coats the donut without running off the top/sides too quickly. Adjust the glaze with more powdered sugar to thicken it or more milk to thin as desired.
* Dip the gluten free donuts in the vanilla glaze or sugar coating - Enjoy!!!

Monday motivation: Set time aside for YOU each day, as much as possible, and watch how your overall energy levels, attitude and mood positively shift over time!

Some things I like to do: walk, swim, cook, bake, garden, talk to my kids, grandson, family and friends, listen to music and watch a good movie!

Salted Caramel Shortbread Cookies

Ingredients:
•1 cup salted butter
•1/2 cup Javamelts caramel sugar
•1 tsp vanilla
•1/2 tsp salt
•2 1/4 cups flour
•6 ounces of chocolate for dipping
•flaked sea salt

Mix butter and Javamelts caramel sugar in a bowl on medium/high speed for 3 minutes. Mix in vanilla and salt. Add flour and mix until incorporated. Dough will be crumbly. Shape dough into a flat disc and roll out. Cut cookies into desired shape. Chill cookie dough on a parchment lined baking sheet (covered) for about 2 hours.

Preheat oven to 325. Roll cookies in more Javamelts caramel sugar to coat the outside. Bake cookie for 16-18 minutes or until lightly golden along the outside rim. Cool.

Melt chocolate in a microwave safe bowl. Dip cookie in chocolate and place back on parchment paper to firm up. Sprinkle chocolate with salt flakes. Enjoy!!

Berry season is my favorite and this French Vanilla Blackberry French Toast Casserole is a staple in our home especially on the weekends!!! It immediately puts me in a good mood and my family absolutely loves it! Strawberries and blueberries can be used too!!!

Ingredients 
3 eggs
1 1/2 cups milk
2 tsp vanilla extract
3/4 cup of Javamelts French Vanilla Sugar
5 cups bread rolls, cut into 1” cubes (GF bread taste great too)
4 tbsp butter, melted, I used a df
2 cups of blackberries or any other kind of berry
 
Preheat the oven to 350 degrees. Spray a 7x10 baking dish with nonstick spray. In a bowl mix together the eggs, milk, vanilla, sugar and butter. Add the bread to the bowl and mix well. Pour half of the bread in the baking dish, spread blackberries on top and then pour the rest of the bread egg mixture on top. Bake for 40 mins or until golden brown. Let rest for 1hr. Follow the next step.
 
Ingredients blackberry sauce
1 1/2 cups blackberries or any other berry
1/4 cup Javamelts French Vanilla Sugar
1/3 cup of water
 
Add all of the ingredients together in a small stock pot and place over medium heat. Cook for 10 minutes, add to a blender until smooth and drizzle over the french toast.

Lemon Lush Pie

Ingredients for Crust
1 1/4 cup of pecan flour or fine chopped pecans
1 1/4 cup 1.1 GF flour
12 tbsp butter, melted

Preheat the oven to 350 degrees. This will fit a 9” pie plate. Mix all
of the ingredients together in a bowl and press into the bottom &
sides of the pie dish. Bake for 20-25 minutes or until golden brown.
Remove & cool completely.

Ingredients for Cream Cheese
16oz cream cheese, room temp
2 lemons zested and juiced
1 1/2 cup powdered sugar

Add all of the ingredients in a bowl and mix until smooth. Spread on the crust.

Ingredients for Lemon Curd
3 egg yolks
1/2 cup Javamelts French Vanilla Flavored Sugar
1 tbsp lemon zest
1/3 cup lemon juice

Add all of the ingredients to a glass bowl and mix well. Pour into a stock pot and place over med/low heat, whisking the lemon mixture until thickened approx 10-15 minutes. Remove and allow to cool completely. Add to the cream cheese layer, and top with swiss meringue.

Ingredients for Swiss Meringue

3 egg whites
1 cup Javamelts French Vanilla Flavored Sugar
Add the egg whites and the sugar to a glass bowl, mix for 4 minutes
with a whisk. Then create a double boiler, add water to a pot over med/low heat and place the bowl over the pot. (make sure water is not touching the bowl) whisk continuously for 5-8mins until slightly foamy (temp should read 160F). Then pour into a mixing bowl and turn the mixer on high for 10 minutes.
