Who doesn’t love a winning recipe??? Whenever my family or friends ask me to make them coffee but “something special”, this is one that I make and it’s always a hit!

How to make:

To make rings:
Instant coffee (1-2 tsp)
Javamelts Flavored Sugar of choice (1-3 tsp) **hazelnut, caramel, mocha, french vanilla or a combination of two!
A little hot water (1-3 tsp) - mix well
Dip your frothing wand in and create the rings
Add ice
Pour in milk of choice
Add a shot or two of coffee
Add more Javamelts if desired
Enjoy!!!

The weekends have been busy and when I have free time, I love to bake. This recipe I surprised a neighbor with who had a birthday party for her grandmother and they absolutely loved them!

French Vanilla Strawberry Filled Pop Tart Cookie Bars

Cookie dough:

½ cup unsalted butter, room temp

1 cup Javamelts vanilla sugar

2 large eggs, room temp

1 tsp vanilla

2 ½ cups + 2 tbsp flour GF 1:1

½ tsp salt

½ tsp baking soda

2/3 cup strawberry or raspberry preserves

Icing:

1 cup powdered sugar (you can make your own flavored powdered sugar - combine 1 cup Javamelts French Vanilla Sugar with 1 tbs cornstarch and pulse in blender until it turns powdery)

1 ½ tbsp whole milk

½ tsp vanilla extract

Rainbow sprinkles to decorate

To make:

-Preheat the oven to 375 degrees.

-Line an 8x8 inch baking pan with parchment paper and set aside.

-In a medium bowl, whisk the flour, salt and baking soda together until combined. Set aside.

-In a stand mixer with the paddle attachment, cream the butter and sugar together until fluffy.

-Add in the eggs and vanilla and mix until combined.

-Slowly add in the flour mixture on low speed, until just combined.

-Spread half of the cookie dough into your 8x8 inch pan to create an even layer of cookie dough.

-Remove the parchment paper/cookie dough from the pan and place flat in the freezer.

-Line the 8x8 inch pan with another piece of parchment paper and spread out the rest of the cookie dough on the bottom in an even layer.

-Spread the strawberry preserves on top of the cookie dough.

-Get the first cookie dough square from the freezer and place on top of the preserves, bottom side facing up.

-Bake for 23-26 minutes. The cookie should be turning a light golden brown.

-Let it cool completely, then make the icing for the top.

-For the icing: combine the powdered sugar, milk and vanilla in a small bowl and whisk until combined.

-Spread over the top of your cooled cookie and add the sprinkles immediately.

-Place in the refrigerator to set for 1-2 hours before cutting.

-Cut into squares or rectangles and enjoy!

Flavored Whipped Coffee

2 Tbs Instant Coffee
2 Tbs hot water
2 Tbs Flavored Sugar

Whip with frother until light and fluffy

Pour on top of in half and half or any kind of milk. Enjoy!

Lemon Lush Pie is one of my sister-in-law’s favorite and I surprised her with it for her birthday. She’s very health conscious and her comment was, “I can have as much as I want because calories don’t count on my birthday!” Cheers to this and her!!!

Ingredients for Crust
1 1/4 cup of pecan flour or fine chopped pecans
1 1/4 cup 1.1 GF flour
12 tbsp butter, melted

Preheat the oven to 350 degrees. This will fit a 9” pie plate. Mix all
of the ingredients together in a bowl and press into the bottom &
sides of the pie dish. Bake for 20-25 minutes or until golden brown.
Remove & cool completely.

Ingredients for Cream Cheese
16oz cream cheese, room temp
2 lemons zested and juiced
1 1/2 cup powdered sugar

Add all of the ingredients in a bowl and mix until smooth. Spread on the crust.

Ingredients for Lemon Curd
3 egg yolks
1/2 cup Javamelts French Vanilla Flavored Sugar
1 tbsp lemon zest
1/3 cup lemon juice

Add all of the ingredients to a glass bowl and mix well. Pour into a stock pot and place over med/low heat, whisking the lemon mixture until thickened approx 10-15 minutes. Remove and allow to cool completely. Add to the cream cheese layer, and top with swiss meringue.

Ingredients for Swiss Meringue

3 egg whites
1 cup Javamelts French Vanilla Flavored Sugar
Add the egg whites and the sugar to a glass bowl, mix for 4 minutes
with a whisk. Then create a double boiler, add water to a pot over med/low heat and place the bowl over the pot. (make sure water is not touching the bowl) whisk continuously for 5-8mins until slightly foamy (temp should read 160F). Then pour into a mixing bowl and turn the mixer on high for 10 minutes.

Oddly enough, I have a lot of friends and family who struggle to be able to make something easy and delicious without having to worry and stress over it. I find that if I keep staple ingredients in the house and wonderful recipes it enables me to whip up anything in a pinch which makes my life so much more enjoyable. Agree or disagree?

Crepes: these are a house favorite for sure!!

Dry Ingredients:
1 C all-purpose flour
4 eggs
2 tbs French Vanilla Javamelts Flavored Sugar (can use any of our 4 flavors)

Milk mixture:
1 C milk
1/2 C water
4 tbs unsalted butter
1 tsp vanilla
Pinch of salt

Garnishment:
French Vanilla Whipped Cream
Fresh strawberries/strawberry jam

(To make flavored whipped cream: whip 1/2 pint of heavy cream and 3 tbs of French Vanilla Javamelts Flavored Sugar on higher until stiff peaks form)

To prepare:

Heat on low heat in a saucepan the milk, butter, water and salt. Once warm and the butter is melted take off the heat and add the vanilla.

In a bowl sift in the flour, add eggs, flavored sugar and milk mixture. Whisk until there are no flour lumps. I sometimes use a blender and pulse blender to get the lumps out.

Heat a 6” medium pan on medium heat and add a pat of butter. Well coat the pan.

Add 1/4 C of the batter and swirl it around so it covers the bottom evenly.

Cook 1 1/2 minutes on each side of until golden brown. Cover with a met paper towel so they don’t dry out.

Serve immediately with garnishments of choice.

Today is a VERY SPECIAL DAY because my beautiful and youngest of 3 daughters, Jessica, is 30! To say that we are proud of her and that we love her tremendously is an understatement. She is the one who everyone can count on to bring a smile to their face and lend a helping whenever needed! This is one of her favorite recipes for sure!!!

Feather light pancakes

1 cup flour
1/3 cup Caramel Flavored Sugar
1 tbs baking powder
Pinch of salt
1 cup milk
1 egg
1 tsp vanilla

Mix dry and wet ingredients together until well blended. Let sit a few minutes. Butter skillet on medium heat. Pour batter, flip when bubbles form.
Dust with flavored powdered sugar made with 1 C Javamelts mixed with 1 tbs cornstarch- pulse in the blender until it’s all incorporated
Top with your favorite berries, sugar dust some more
Serve and enjoy!

If anyone is going to a party or hosting, this dessert is so festive, easy and delicious!

How to make flavored whipped cream:
1 half pint heavy cream
1/4 to 1/3 c Javamelts of choice
Whip on high with a stand or hand mixer for 1 minute until stiff peaks form

Layer

Fresh berries (toss in Javamelts for added flavor and sweetness)
Add flavored whipped cream
Add more berries
Top with more flavored whipped cream and any type of sprinkles or crunchies garnish with a few berries

Enjoy!

Memorial Day weekend has arrived and is for us to remember and honor our country’s heroes! As we gather and celebrate I am forever grateful and thankful for their sacrifice. I’m heading to a BBQ later and this recipe is one of my favorites.

Hint: Keep frozen puff pastry dough in the house and you’ll always be able to make these in a pinch.

To make French Vanilla whipped cream:
Whip 1/2 pint of heavy cream and 3 - 5 tbs (to taste) of French Vanilla Javamelts Sugar on high until stiff peaks form
Mix berries and if they’re not sweet enough toss in a little French Vanilla Sugar
Butter the bottom of a cupcake pan - form the puff pastry by using the bottom of the pan and bake per the package
Brush with melted butter
Sprinkle French Vanilla Sugar all over
Fill the cups with the fresh whipped cream and berries
Enjoy!!!

Memorial Day weekend is almost here and these made the list of desserts. Do you have a favorite recipe that you’re making?

Mocha Red Velvet Oreo Brownies
Ingredients:

2/3 cup white chocolate chips

1/3 cup Javamelts Mocha Flavored Sugar (no coffee taste - just chocolate)

1/3 cup cane sugar

2 eggs (room temp)

5 tbsp avocado oil

2/3 cup almond flour

2 tbsp Cocoa powder

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

6-7 crushed Oreos for the batter, plus a few extra for the top.

Preheat oven to 335. In a small pot, melt white chocolate chips and avocado oil on very low heat until completely combined. Turn off heat, set aside and allow mixture to cool.

In mixer whisk together sugar and eggs for three minutes on low until no longer grainy and a lighter color. (Do not mix any higher than low).

Place all dry ingredients into a glass bowl.

Providing chocolate mixture has slightly cooled, combine into mixer with egg and sugar. Add vanilla and mix on low for 15 seconds.

Add in dry ingredients and mix well with a spatula. Add red coloring at this time and mix well with spatula. Fold in crushed Oreos.

Line a 8 inch baking pan with parchment paper and fold in batter. Place extra crushed Oreos on top of batter and bake for 25-30 minutes.

**It can be made with this gluten-free, grain-free version or you can modify it to suit your needs.
