✨Traditional medovik with sour cream✨
This Saturday I will have 2 big medovik cakes, which will be 12 slices. 6 slices are already reserved, we’re keeping 2 for ourselves, so 4 more slices will be available for reservations.

Why is this medovik special?
🍯 Most recipes only use a small amount of honey and the rest is sugar, my recipe uses 100% honey to give it a rich caramelized honey flavor
🍰 Most commercial recipes use sgushyonka (Russian dulce de leche) for cream, which is great but this one I’m making this week uses sour cream, which is the traditional ingredient that goes into the homemade version, a cake uses a whole bag of Tatua sour cream, which makes up most of the ingredient cost.

This borodinsky was made with French T130 whole rye flour from Moullins Bourgeois, a limited edition, I can no longer find it anywhere 🥲 the floral and warm scent of scalded rye, caraway, and coriander seeds combined a warm deep sweetness of molasses was amazing. I really enjoyed the process of researching and tweaking the recipe for this special request. I was a bit nervous at first but I was relieved when my customer said it’s 99% close to what he was expecting 🥳 Now I’ve got a new bread under my belt ☺️

Đi chợ bán bánh vui nhất là khách ăn xong rồi quay lại mua liền cái nữa. Còn có khách mua 1 cái bánh, cắn 1 miếng xong xuýt xoa ngay tại chỗ rồi hỏi còn bao nhiêu lấy nốt liền luôn (lúc đó mình đang đóng gói để ra về rồi). Xong bê thùng đồ ra tới xe thì một anh Tây gọi với qua đường hỏi “ê có phải bạn bán bánh ko? Nãy tui được ké một miếng của bạn tui, ngon quá ý” 😂 dễ thương 🫶🏻 còn có cả cặp đôi người Pháp đang đi honeymoon mua bánh ăn xong đi chơi hết 1 vòng rồi quay lại khen ngon quá tui cũng thấy vui xỉu 🎀
