🔍Understanding Brix: A Critical Metric for Beverage Quality

In the beverage industry, Brix (ºBx) represents the ratio of dissolved solids within a liquid. During production, this metric identifies the concentration of sugar, minerals, and other vital ingredients blended with water. For instance, a measurement of 10 ºBx indicates that 10g of solids are present in 100g of solution (i.e. 10g solids mixed with 90g water). Manufacturers typically monitor these levels using a refractometer.

💥 Brix as a Proxy for Quality Control
Monitoring these levels allows producers to:
- Verify that fruit has reached its peak flavor profile before processing.
- Identify and address inconsistencies between raw material batches.
- Recalibrate formulations to ensure a uniform taste across all production runs.

💥 Case Study: The Maturation of Coconut Water
Research from Tetrapak highlights the importance of timing; coconut water reaches its maximum Brix level between 6 and 9 months of growth.

During this specific window, the water contains highest concentrations of sugar, minerals, and potassium. This results in a cloudier appearance (due to the presence of calcium and other minerals), a sweeter profile, and a more robust flavor (as potassium has a big effect on coconut water’s flavor).

Once this peak passes, ºBx levels decline rapidly as sugar and minerals begin to degrade, leading to a significantly less flavorful product.

Beyond the hype of functional beverages, are consumers ready for another energy drink alternative?

"Energy Refresher" is a caffeinated iced-beverage often made from sparkling water, fruit juice or fruit-flavored syrup, and plant-based extracts that contain high dosages of caffeine (most notably cascara or yerba mate). This category focuses more on natural, plant-based alternatives to energy drink or coffee, and offers more functional benefits aside from “staying awake”.

When Dunkin and Starbucks anchors their year-round menu with a new "Energy Refresher" line, and emerging brands like Huxley enter retail with real juice and upcycled cascara caffeine, the industry takes notice.

The traditional energy drink market is dominated by an aggressive, hyper-masculine aesthetic—Red Bull, Monster, and the meteoric rise of Liquid Death’s recent collab with “The Boys”. They win on massive marketing spending, with extreme branding strategies, and high-margin commercial formulas.

To break free from their market dominance, and avoid costly ads wars, new energy drink brands must pivot to a new segment. Energy refreshers are formulated to address this new strategy gap.

Whether this category succeeds over the next year depends entirely on three indicators:

1. The Pasteurization vs. Flavor Paradox
Legacy energy drinks use synthetic caffeine anhydrous and artificial flavors because they are chemically indestructible. They easily survive high-heat pasteurization. Energy refreshers use real fruit juices and delicate plant-based caffeine (like green tea or yerba mate). Ensuring reasonable margins with ingredient integrity will require great manufacturing know-how.

2. Cost of Goods Sold (COGS) at Scale
Synthetic caffeine costs pennies. Upcycled cascara superfruit or premium natural botanical extracts cost a premium. Can a real-juice energy refresher achieve a low enough COGS to compete on grocery shelves against a $2.99 giant? These brands can bet on higher prices for more functions. But the real question is: How much higher are consumers willing to pay?

3. Consumer Retention Beyond the Summer
Refreshers are a summer thirst-quenching drink. Will the consumer data support year-round retention, or will velocity drop 70% the moment winter hits? Starbucks is betting on year-round traction, but RTD brands have to prove they aren't just a seasonal novelty.

The Watchpoint: This is an attempt at creating a new market niche, to take away market share from incumbents. Brands must monitor signals from consumers before making any commitment. If they succeed, there will be an upheaval in the energy space. If not, then there is always the industry playbook that has been tested and proven.
