HOW TO MAKE CRISPY EGGPLANT SALAD WITH BEEF – SWEET, SOUR, SAVORY, AND DELICIOUS WITH SHRIMP CRACKERS
Just hearing the words white eggplant already makes you think of that satisfying crunch. When combined with tender beef, fresh herbs, fried shallots, fried garlic, and a sweet-and-sour dressing, it becomes absolutely delicious. This beef and white eggplant salad is incredibly appetizing, with crisp white eggplant, tender and juicy beef, a perfectly balanced sweet, sour, savory, and spicy dressing, plus crunchy shrimp crackers on the side.

SALAD DRESSING
1 cup sugar
1/2 cup calamansi juice
1 cup fish sauce
1/2 cup water
3–4 tablespoons chili sauce
Minced garlic and chili
First, prepare the eggplants. Fill a bowl with water, then add salt and lemon juice and stir well. As you cut the eggplants into smaller pieces, immediately place them into the lemon-salt water. This helps remove the sap, keeps the eggplants bright white, prevents discoloration, and maintains their crisp texture.
Soak the eggplants for a while to remove the sap. When ready to make the salad, remove the eggplants and let them drain completely. There is no need to rinse them again, as this helps preserve their light flavor and natural crunch.
Next, prepare the beef. For this dish, beef tenderloin is recommended because it is tender, less chewy, and remains juicy when quickly stir-fried. Rinse the beef briefly, pat dry, and slice into thin bite-sized pieces.
Place the beef in a bowl and marinate with minced garlic, minced shallots, sugar, MSG, seasoning powder, a little ground pepper, fish sauce, and oyster sauce. Mix well so the seasonings coat the meat evenly.
Finally, add a little cooking oil and mix again. The oil helps keep the beef tender, prevents it from drying out during cooking, and allows the seasonings to coat more evenly. Let the beef marinate for a while.
Now prepare the salad dressing. In a bowl, combine 1 cup sugar, 1/2 cup calamansi juice, 1 cup fish sauce, 1/2 cup water, 3–4 tablespoons chili sauce, and minced garlic and chili.
Stir until the sugar completely dissolves and all ingredients are well combined. The dressing should have a rich sweet, sour, savory, and spicy flavor. Taste and adjust the sugar, fish sauce, or calamansi juice according to your family's preference.
Remember to set aside a small portion of the dressing to use as a dipping sauce later. The remaining dressing will be used to toss the salad.
Heat a pan until very hot, then stir-fry the beef quickly over high heat. Cook just until done, then immediately turn off the heat. This helps the beef stay tender, juicy, and flavorful without releasing too much liquid. Overcooking can make the beef tough.
If preferred, you can briefly blanch the beef in boiling water instead of stir-frying it. However, quick stir-frying with the marinade gives the beef more flavor and aroma.
Only toss the salad right before serving. Place the drained eggplants into a large mixing bowl, then add the cooked beef, fresh herbs, julienned chili, fried shallots, and fried garlic.
Pour the dressing over the ingredients and gently toss everything together. Avoid squeezing or mixing too aggressively, as the eggplants can release water and the beef may break apart. Toss just enough for everything to be evenly coated and flavored.
This beef and white eggplant salad should be mixed immediately before serving. If mixed too early, the eggplants will release water, lose their crunch, and dilute the flavors of the salad.
Transfer the salad to a serving plate and sprinkle additional fried shallots, fried garlic, and a few chili strips on top for garnish.
Serve with crispy shrimp crackers and the reserved dipping sauce on the side. It is incredibly delicious.

Đầu tiên mình sơ chế cà pháo trước. Chuẩn bị một thau nước, cho muối và chanh vào khuấy đều. Cà pháo cắt nhỏ tới đâu thì cho ngay vào thau nước muối chanh tới đó. Cách này giúp cà ra bớt mủ, giữ được màu trắng đẹp, không bị thâm đen và vẫn giòn ngon.
Ngâm cà một lúc cho cà sạch mủ. Khi chuẩn bị trộn gỏi thì vớt cà pháo ra để thật ráo. Không cần rửa lại với nước nha, vì như vậy cà vẫn giữ được vị đậm nhẹ và độ giòn tự nhiên.
Tiếp theo sơ chế thịt bò. Món này nên chọn thịt bò thăn để thịt mềm, ít bị dai và khi xào nhanh vẫn giữ được độ ngọt. Thịt bò rửa nhanh, thấm khô rồi cắt lát mỏng vừa ăn.
Cho thịt bò vào tô, ướp với tỏi băm, hành tím băm, đường, bột ngọt, hạt nêm, một ít tiêu, nước mắm và dầu hào. Trộn đều cho thịt thấm gia vị.
Sau cùng cho thêm một ít dầu ăn vào trộn lại. Dầu ăn giúp thịt bò mềm hơn, khi xào không bị khô và gia vị bám đều hơn. Ướp thịt một lúc cho thấm là được.
Bây giờ pha phần nước sốt trộn gỏi. Cho vào tô 1 chén đường, 1/2 chén nước tắc, 1 chén nước mắm, 1/2 chén nước lọc, 3–4 muỗng canh tương ớt và tỏi ớt băm.
Khuấy đều cho đường tan hết, các gia vị hòa quyện lại với nhau. Phần sốt này có vị chua ngọt mặn cay rất đậm đà. Mình có thể nếm lại rồi gia giảm thêm đường, nước mắm hoặc nước tắc tùy khẩu vị gia đình.
Nhớ múc riêng một ít nước sốt để làm nước chấm ăn kèm nha. Phần còn lại dùng để trộn gỏi.
Bắc chảo lên bếp, để chảo thật nóng rồi cho thịt bò vào xào nhanh tay trên lửa lớn. Xào vừa chín tới là tắt bếp ngay để thịt bò giữ được độ mềm, ngọt và không ra quá nhiều nước. Nếu xào lâu quá, thịt bò sẽ dễ bị dai.
Nếu không thích xào, mình cũng có thể trụng sơ thịt bò qua nước sôi rồi vớt ra để ráo. Nhưng xào nhanh với gia vị thì thịt sẽ thơm và đậm đà hơn.
Khi chuẩn bị ăn mới bắt đầu trộn gỏi. Cho cà pháo đã để ráo vào thau, thêm thịt bò đã xào, rau thơm, ớt sừng cắt sợi, hành phi và tỏi phi.
Rưới nước sốt trộn gỏi lên rồi trộn đều nhẹ tay. Không nên bóp mạnh vì cà pháo dễ ra nước và thịt bò dễ bị nát. Trộn vừa đủ để các nguyên liệu áo sốt và thấm vị là được.
Gỏi bò cà pháo nên trộn ngay trước khi ăn. Nếu trộn quá sớm, cà pháo sẽ ra nước, mất độ giòn và món gỏi cũng bị loãng vị.
Bày gỏi ra đĩa, rắc thêm chút hành phi, tỏi phi và vài sợi ớt lên trên cho đẹp. Ăn kèm bánh phồng tôm giòn rụm, chấm thêm phần nước sốt đã chừa lại là ngon dữ lắm luôn.
Thành phẩm là đĩa gỏi bò cà pháo có vị chua ngọt mặn nhẹ, cay thơm vừa phải. Cà pháo giòn rôm rốp, thịt bò mềm ngọt, rau thơm dậy mùi, hành phi tỏi phi béo giòn làm món ăn hấp dẫn hơn rất nhiều.
