Very happy to say that our artichokes have made it to the dinner menu for the first time! Its our first year growing them and I am looking forward to playing with them as long as the season lasts…
Brown butter seared artichokes, whipped ricotta, fresh herb gremolata and toasted almonds - simple and gentle flavours to highlight the stars of the plate - the beautiful ‘chokes!

A Culinary Journey Through Mexico

Spending a month and a half in Mexico is far from just a vacation - it’s an immersion into a world where food is both a daily ritual and an art form. A lesson in simplicity and creativity, of utter love for a single ingredient.

A tortilla: just corn and water. Yet it holds infinite possibilities - folded, rolled, stuffed, stacked. Tacos, tamales, tlacoyos, gorditas, flautas each with its own technique passed down for generations.

And of course the sauces! All the salsas and the moles, impossible to define by a single recipe, always personal and interactive waiting for the customers final touch. A dish is never truly finished until the eater makes it their own.

But what I love the most is how accessible food is - always within reach, just an open window into a home kitchen where an abuela prepares the food that has been feeding her family for years. Communal markets, busy plazas, tindy fondas and cenadurias, busy stalls that pop up by the side of the road just in time for dinner and disappear by midnight. No barriers, no pretension, just soul warming flavours.

Mexico’s culinary landscape isn’t just varied - it’s alive. And I’m here for every bite.

From the garden to the table with the magic of an early morning harvest.
Every morning on starts off with a harvest in our vegetable garden. All the produce is hand picked with lots of love, always grateful for the bounty of the land. After the harvest, the selected produce goes directly into the kitchen where we plan our dishes that highlight the best of the season.
