EMPANADA DAY!!! My 1st attempt and they came out really great! I wanted to make something for my Costa Maya Experiences guests, that is easy for me to manage. I have put some in the freezer and will test out the best method of reheating from freezer to plate. I am so happy! I made them with love and you can tell! 💖🥟🍹💋

So it started out being a simple Chilaquiles con Huevos dish, but the beautiful sauce that I had bought from my friend Luz at Pan de Santos [in Pedro A. Santos] was a bit spicier than I had remembered & I needed to add the Crema & Avocado for a cooling effect. It was delicious!!!
