Quintessential Curry from Andhra Pradesh in India. Bold, tangy, pungent flavours. Tamarind provides the "zip" balancing the heat from the regional Guntur Sannam Chillies. Tomato and Coconut Milk. Chicken is marinated in Turmeric, Ginger, Garlic, Lemon and Chilli. Poppy Seeds, Cardamom, Coriander, Cumin, Cloves et al are dry roasted and ground into a paste. Slow cooking. Medium to Hot.

Pan juices and tidbits from cooking the Pork, nectar from Maple roasting the Pears and Chicken Bouillon are the foundation for this sauce. Dry Apple Cider, Mustard, Shallots, Crème Fraîche. Toasted Fennel Seeds et al. We do so enjoy this with a Potato Rosti pan for the table.
