Roasting the ingredients is essential to achieve the depth of flavour. We like to serve this with Rosemary Potatoes.

An Indo-French Spice blend created in 17th Century in Southeast India. Shallots, Coriander Seeds, Mustard Seeds, Cumin, Chilli Flakes, Curry Leaves, Turmeric, Fenugreek and Black Peppercorns. Chicken is marinated in Yoghurt, Ginger, Lime, Garlic and the Vadouvan blend. The Curry is developed using Tomato, Chicken Bouillon and Green Chilli. Medium heat.

Pork Fillet and Maple Roasted Pears in the French Sauce of C***r and Wholegrain Mustard. The Fillet is marinated in Garlic and Thyme. Pan juices and tidbits from cooking the Pork, nectar from Maple roasting the Pears and Chicken Bouillon are the foundation for this sauce. Dry Apple C***r, Mustard, Shallots, Crème Fraîche. Toasted Fennel Seeds et al. We do so enjoy this with a Potato Rosti pan for the table.
