Single origin or blend?

The first thing to know is that this is not a quality ranking.

Single-origin coffee comes from one identifiable origin, which might mean a particular country, region, farm or producer. That can make it especially interesting when you want to explore how growing conditions, processing and origin show themselves in the cup.

A blend combines coffees selected to work together. A good blend might be built around balance, consistency, body or a particular flavour profile that the roaster wants to reproduce reliably.

Matcha is green tea, but not every green tea is matcha.

With a conventional green tea, the leaves are infused in water and then removed. Matcha takes a different approach: the tea leaf is finely ground into powder and consumed as part of the drink itself.

Spring is a good reminder that tea does not always need a kettle.

Cold-brew tea is made to infuse directly in cold water, which makes it one of the easiest ways to move your tea ritual into warmer weather. TCE currently has three Teekanne options worth exploring:

The range is designed for cold-water brewing, with the infusions typically ready in around five to eight minutes.

What does tonight call for?

Something creamy, spiced and a little more interesting than the usual drink.

Try this easy Masala Chai Cocktail:

You’ll need:
•  60 ml strong masala chai, cooled
•  30 ml spiced rum
•  30 ml milk
•  10 ml honey or simple syrup
•  Ice
•  Cinnamon or star anise to finish

Add everything to a shaker with ice, shake until chilled, then strain over fresh ice.

The chai brings the warming spice, the rum adds depth, and the milk softens everything into a smooth, easy-drinking cocktail.

Want it alcohol-free? Simply leave out the rum and add a little more chai.

Easy enough to make at home. Different enough to make the evening feel a little more special.

What Is Moka Pot Coffee?

Moka pot coffee is strong and concentrated, but it is not technically the same as espresso.

An espresso machine generally brews at much higher pressure. A moka pot uses lower pressure from steam to move hot water from the bottom chamber, through the coffee grounds and into the upper chamber.

For a better stovetop brew:

• Fill the lower chamber with water to just below the safety valve.

• Add ground coffee to the filter basket without pressing or tamping it down.

• Use low heat and remove the pot once the coffee rises and begins to gurgle.

The result is a bold, rich cup that can be enjoyed on its own or softened with hot water or milk.

The story started after Dee Swift spent three years travelling and working in India, where a cup of masala chai on a train journey sparked a lasting interest in the drink. She collected recipes from chai sellers, families, travellers and friends before discovering the recipe that would eventually inspire Pukka Pure’s Original Chai.

Today, the South African-made instant blend combines freshly ground cardamom, cinnamon, ginger and cloves in a creamy base. It is naturally caffeine-free, vegetarian, Halaal-certified and made without preservatives or artificial flavourants.
