My second ragu sauces in Italy - this is from Puglia and is known as Ragu alla Pugliese. This is beautifully diced, lamb, beef, pancetta and chicken with pieces of salsiccia (Italian sausage). This is added to onion, garlic, chili, tomato puree and tomato paste. Of course add a glass or 2 of a great white wine. Served best with orecchiette, to pick up that rich sauce. Of course sprinkle some parmigiana on top of it. Paired perfectly with a great glass of medium bodied Primitivo red wine.

There are at least 6 different ragu sauces in Italy - my favourite and number 1 is "Ragu alla Bolognese" from the Bologna region. Beautiful minced beef with diced pancetta and of course a sofritto, a bit of red wine and a drop of milk. Served best with artisan hand made tagliatelle. Of course sprinkle some parmigiano on top of it.
